KUGAN'S KITCHEN PART 3

Very busy, with relatives coming to visit Aishu,
since here in Malaysia, school closes for a week,Chinese New Year.


Dev, I used to be like you, before I got married, not that religious.
Early morning after bath, straight to the alter, request to God for good health, and studies, holy ash on the forehead, thats it.

After wedding, my in=law transformed me to what I am today.
Fastings, poojas, reciting mantras singing of
thevaarams , observing all festivals,
I am a totally a different person now.
I am very happy with my new transformation.
All our children are trained in this way.

My next goal is to do my prayers during "brama moortham
God has to help me to achieve my ambition.

Even though I am up at 4.00a.m, I am tied down because of
the school going children.

You are right Dev, you have to use dill sparingly.
We do not get it in Malaysia, even fresh methi leaves.

Dev, you can cook one pot biryani without coconut milk.

PUMPKIN TOGAYAL

Ingredients:

1 cup pumpkin cubes steam just cooked
3 tsp urad dal
1 tsp mustard seeds
1 tsp tamarind paste less or more
4 dry red chillies broken
¼ tsp asafetida powder
½ tsp oil
Salt to taste


Seasonings:
1 tsp oil
¼ tsp mustard seeds
1 sprig curry leaves.

Method:
Heat 1 tsp of oil, fry the red chillies, mustard seeds,
urad dal and asafetida.

Grind the chillies, along with the tamarind paste and salt.
Add the steamed pumpkin pieces and grind.
Lastly add the fried mustard seeds and urad dal
and grind lightly.

In a small frying pan add the oil, mustard seeds.
add in the curry leaves. Let it splutter and add to the
ground pumpkin mixture.
This togayal has a very nice sweet, sour taste.
Goes well with dosai, idli or even rice.

BADAM HALWA

Ingredients:

1 cup whole badam
1 cup sugar more if you like
5 tbs of ghee
¼ cup to ½ cup of milk
Little saffron or yellow colour

Method:

Soak the badam in very hot water for about ½ an hour.
Then remove the skins from the badam.
Soak the saffron in little milk.

Using the milk grind the badam to a smooth paste.
In a heavy bottomed pan, add the ground badam paste,
sugar and the saffron soaked milk.

Place the pan on medium heat and keep on stirring.
As it thickens add the ghee little by little.
Stir until the mixture starts to leave the sides, and come together.
Keep on stirring.
You should be able to roll a little of it into a ball.
Remove from heat and cool.
The consistency should be soft. Enjoy.
