Since you are in Madras,

Try Popular appalam, i would say the best, but if it is fresh...check for the date.

Ambiga appalam. You can get directly from their depot in T. Nagar.. so u'll get the fresh pack. here you get both pappadam and appalam.

or the new Mother's recipe appalam is also good..just tried it yesterday.

There is one from Idhayam gp called DOT appalam.. but never tried.
