    onion vathakuzhambu

    hi,
herez a simple and tasty recipe for vathakuzhambu

    ingredients
    onion big 2 (chopped finely)
tamarind juice (from a small lemon sized ball)
green chillies(slit), salt according to taste
    oil for seasoning
    curry leaves few
    mustard seeds 1/2 tsp
    channa dal 1tsp
    fenugreek (methi ) 1tsp
    hing a little

    method
    1. heat oil in a pan
    2. allow mustard seeds to splutter, add curry leaves, then add channa dal and finally methi. methi shud turn just brown, b careful not to burn it.
    3. just as methi browns, add the chopped onions with some salt and slit chillies, fry till onion is transparent
    4. add the tamarind juice to it with the rest of the salt and a little hing and let it boil till the quantity is halved

    u r done.
this can b had with rice and also with chappathis

    note

if u dont want to use only tamarind, u can half the quantity of tamarind, add a tomato, boil it a little and then squeeze out the juice from it.

    variation
instead of big onions, u can use pearl (button) onions or even bindhi. it comes out well too.

if u normally use sambar powder, u can omit chilies and use sambar powder instead.

    Vathal kozhambu:

    Ingredients :

    tamarind water
    vathal/any vegetable/any dhals
    sambar powder
    mustard seeds
    asafoetida
    salt
    curry leaves

    Preparation:

    Make a thick tamarind water.
In a pan add 4 to 5 spoons of oil and when the oil is hot add mustard seeds, and when it splutters, add split chana dhal-1 spoon, curry leaves, asafoetida, then whatever vegetable or vathal u have add and fry it for some time, and then add sambar powder, fry so that it get mixed well with the oil, also u will get the roasted powder smell, immediately add the tamarind water.Add salt and allow it to boil for a longer time so that it becomes thick.

U can have this with rice, pongal, idli, dosa, upma etc

vetha kozhambu rice (with added ghee or gingely oil) + potato fry will be a great combination, also with vathal and it will be so good with curd rice too!!
