    How to make puffy uthappams?

    Can somebody please tell me how to get this right?I get the uthappam thick around the corners but at the centre its just like dosa.Help me out here.What shud i do?

    Uttappam recipe

    Hello,

    We use dosa batter for making Uttappam.It used to come good for us.

    First dip one cotton cloth in gingelly oil and wipe the pan with that oil.Heat the pan and then pour the batter slightly thick and spread over the pan like dosa
    ( thick).Immediately on the top of the dosa sprinkle chopped tomatoes,Chopped corriander leaves, chopped green chilies,ghee and Chopped onions. After this, cover the lid over dosa and let it cook in a medium flame.Then reverse the dosa and let it cook for few seconds.

    Dosa propotion:3 cup of idily rice,1 cup urud dhal, cooked red rice and 1 tsp of methi seeds.
