    Kothu Roti

    Can some one please tell me, how u can make vegetable Kothu roti at home, do u need a special 'Thava', for this. I tried at home, but it never comes as tasty as you would buy from the shop

    Hi there Raghu

    The smell of kothu roti must me in the air at the moment.... I was watchign TV at 2am, and got a craving for Kothu roti. I am a sri lankan living in Australia - its not easy to ge good kothu here. So I got out of bed, got on the internet and started lookign for a recipe. For the first 45 minutes I really had no luck. BUT! Finally I had some luck!

    See in Sri Lanka we have something called "Godhamba Roti". Basically it's a roti made from kothu roti..but with a filling inside, made into a rectangular shape about an inch high, 4 inches long and about 2.5 inches wide. The filling inside is wrapped up in one sheet of roti. THe filling can be meaty or vegetarian. One of my favourites is made almost like the masala inside malasa dosai. But instead of onions using lots of leeks - and very hot green chilli.

    I did a search for "Godhamba Roti" on www.google.com. All the recipes I found are as follows:

    In Sri Lanka they use coconut oil to make the roti and its absolutely DELICIOUS. Its not the best thing for your heart - but everythign in moderation I suppose.

    I really hope that helps. I am goign to try them out over the next few days. When you are mixing in all the vegetables to make kothu roti, I think its important to have a very hot cooking surface - like when chinese cook fried rice. If I figure out the mystry of making the perfect Kotthu Roti - I will let you know.

    that is the most difficult thing to get , but hey thank you very much dude for such useful info.

    KOTHU PAROTTA:
    Heat a dosa plate and pour some oil. Add 2 chopped onions, 2 chopped green chillies and 2 chopped tomatoes. Mix well and fry for some time. Break 2 eggs and pour on the vegetables. Mix well. Crush 2 parottas into timy pieces and add to the masala. Sprinkle 1/2sp chilli powder, 1/2sp jeera powder and 1/2sp pepper powder and enough salt. With two dosa karandis, you must smash these ingredients into pieces using force with yr hands. Mix well. Add chopped coriander. Put off the fire. "
