    mix veges, we use basically one soft vegetable and rest will be hard.
    options are:
    1. drumstick, potato and brinjal
    2. drumstick, potato , brinjal and broad beans
    3. drumstick, potato, sponge guard
    4. drumstick, potato, brinjal and jack fruit seeds
    5. with all the above combinations with banana
    6. yam and long beans
    7. yam, long beans and black channa
    8. sweet potato alone
    9. sweet potato , broad beans
    10. sweet potato, broad beans and brinjal

    all the above combinations are very tasty. we can have with sambar , more kulambu, rasam or kootu.

    Madhu anneh, my famous old aunt came to Malaysia for my niece's wedding.
    Normally she would make lightning visits to Malaysia. (Such a busy woman, 85 years old )
    This time she was forced to stay for a week because of all the happenings in our family.
    She gave us tips on even simple cookings, that made the dish so delicious.
    Today I will post a simple keerai dish that was so delicious.

    Madhu anneh a simple recipe with the agar agar. Kugan

    MILK JELLY

    Ingredients:

    25 grms agar-agar strands (china grass)
    1000 ml water
    400 ml evaporated milk
    150 grms sugar (more if you like)
    Few drops of pink colour
    Little rose essence

    Method:
    Soak the strands of agar-agar in cold water for an hour.
    Drain the agar-agar, put them in a pot.
    Add 1000ml of water and stir constantly, while bringing
    to the boil.

    Add the sugar and keep stirring and simmering until all the strands
    are completely dissolved.
    Add in the colour , milk and essence.let it boil once.
    Remove and pour into a tray that has been rinsed in cold water.
    Allow to set, cut into diamond shapes.
    This will be a firm jelly.

    Well here is a China grass with lychee.

    10 grms china grass powder
    700 ml water
    300 ml juice from the lychee fruit.
    200 grms or less sugar to taste, as syrup has sugar.
    cut the lychee fruits into long strips.

    Boil the mixture, pour it into moulds or tray.
    Scatter the lychee fruits, let it set.
    Chill and cut into pieces.

    You can do this method with any fruits.

    LAYERED AGAR AGAR

    Ingredients:

    Brown layer:
    25 grms agar - agar strands soaked for 2 hours
    1 litre water
    300 grms palm sugar.

    Milk layer:
    300 ml thick coconut milk from 1 coconut
    A pinch of salt.

    Method:
    Crush the palm sugar, add ½ cup of water, melt the sugar
    and strain it, keep aside.

    Squeeze out the water from the soaked agar - agar.
    Put it in a pot, add the 1 litre of water.
    Slow boil till the agar – agar dissolves.
    Add in the palm sugar and let it boil once.

    Now add in the thick coconut milk with the salt.
    Off the fire, do not stir.
    Immediately pour it in to a wet tray.
    Do not disturb it till it sets. Chill in the fridge.
    Cut it into any shape that you like.

    WHITE AND BROWN AGAR AGAR

    Ingredients:

    The White Layer:
    1 tbs agar agar powder
    400 ml water
    ¼ cup condensed milk

    The Brown Layer:
    3 tbs agar agar powder
    1200 ml water
    230 grms palm sugar or light brown sugar

    Method:
    Cook the white layer, pour the water in a pan.
    Add in the agar agar powder, stir till it dissolves.
    Add in the condensed milk, mix well.
    Pour it into a small tray and let it cool.
    When set, remove and cut into rectangles.

    Heat the water for the brown layer, add all the ingredients.
    Boil till all the ingredients are dissolved well.
    Pass through a sieve.

    Now arrange the white agar agar in a tray.
    Wait till the brown layer cools a bit.
    Pour it over the white layer. Let it cool.
    Put it in a fridge, cut the slices as you like.

    Note: the white layer can be cut into any shapes as you please
