    The ones we buy will be strained clear chilli oil.

    Try this simple brinjal masala. Kugan


    SPICY BRINJAL MASALA

    Ingredients:

    (A)
    2 tbs of oil
    1 tsp mustard seeds
    ½ tsp aniseeds
    ½ tsp cumin seeds
    ½ tsp fenugreek seeds

    (B)
    ¼ tsp asafetida powder
    1 sprig curry leaves
    1 tsp ginger paste
    1 onion chopped
    1 small tomato chopped
    Salt to taste

    (C)
    ½ tsp turmeric powder
    ¼ tsp cumin powder
    2 tsp chillie powder
    1 tsp coriander powder

    250 grms of brinjals, cut into 1 ½ inches long

    ¼ cup water
    ½ tsp garam masala
    1 tsp amchur powder or to taste
    Little sugar to taste

    Method:
    Heat oil in a non stick wok, add in all the spices in (A)
    Let them crackle, give a good stir.
    Add in all the ingredients in (B), stir fry on medium heat.
    Cook till the tomatoes are mushy.

    Add in all the ingredients in ( C ).
    Stir fry the spices for few seconds, add in the cut brinjals.
    Mix them well so that every piece is coated well with the spice mix.
    Add in the ¼ cup of water, garam masala, amchur and sugar.

    Cover and cook on medium heat till the brinjals are cooked.
    Do not over cook the brinjals till mushy. Stir once nicely.
    Remove and serve
