QUICHE
hi,
i made this one for the first time, and my kids were all over it like bees and ants !!
QUICHE (read as QISH ;rhymes with WISH)
items I
eggs - 5 nos. beaten
milk - 1 cup
plain flour - 1/2 cup
cream cheese - 4 tsp
chilli powder - 1 tsp (add more according to your taste)
black pepper powder -1 tsp (add more if u want it hot)
salt
items II
butter - 1 tsp
onion - 1/4 cup , chopped
capsicum - 1 no. chopped
mushroom - a handful, chopped
spinach - 1/4 cup, chopped( optional)
salt
items III
bread crumbs - 2 tbsp
grated cheese - 1 cup
butter - 1 tsp
other optional items - cooked chicken pieces, sea food, leftover meat etc
method:
1. preheat oven to 350 degrees.
2. whisk all things under item I to a smooth batter.
3. stir fry all things under item II for 2 minutes, and add it to the batter.
4. butter a round baking dish, sprinkle with bread crumbs.
5. pour the batter in to it.(the batter must be like idli batter consistency or like cake batter)
6. sprinkle the grated cheese on top.
7. bake in the oven at 350 degree for 45 minutes (or until set and the top turns golden brown)
8. allow to cool a bit.
9. slide on to a platter and cut into triangles.
10. serve with ketchup.
i had used chicken and my kids didnt need any accompaniment at all

dear vm,
i dont know the traditional keralite recipe...but this is how i make brinjal masala!!
brinjals - 6 nos, medium
(cut in to 4 ,length wise)
turmeric -1/4 tsp
salt
oil -3 tbsp
--------
grind together the following:
"small onions - 1/4 cup
tomato - 2 nos, small
green chilli -1 (or as required)
ginger - a small piece
garlic - 4 cloves"
---------
mustard seeds - 1 tsp
cumin seeds - 1 tsp
split black gram -1 tsp
curry leaves - a sprig
onion - 1/4 cup, chopped
red chilli powder - 1 tsp
cumin powder - 1 tsp
salt
coriander leaves
1. fry the brinjal in oil, sprinkled with turmeric and salt. when golden remove and keep aside.
2. in a spoon of heated oil, add mustard, cumin, gram and curry leaves. when mustard crackles, add onion and fry till brown.
3. add the ground items, chilli & cumin powders and salt. fry for a few minutes.
4. add fried brinjals, sprinkle a little water and cook the masala and brinjal together taking care not to overcook and mash the brinjals.
5. garnish with chopped coriander and serve.

ZUCCHINI TARTLETS
olive oil - 1 tsp
butter - 1 tbsp
onions - 5, chopped
zucchini - 2, grated
plain flour - 2 tbsp
eggs - 3 , beaten
cheddar cheese - 2 cups, grated
salt, pepper, paprika/chilli powder
1. preheat oven to 180 degrees
2. heat oil and butter in a pan, and fry the onion till it is colourless.
3. add zucchini and seaoning.remove from heat.
4. add all the items and mix.
5. spoon into greased small tart moulds and bake 15 to 20 minutes.
6. serve warm with sour cream.

TUNA CAKES
onion - 2 no, chopped finely
green chilli - 2, chopped
curry leaves - 5 nos. , chopped
canned tuna fish (in water) - 500 gms
lemon juice - 1 tsp
turmeric - a pinch
chilli powder - 1/4 tsp
plain flour - 2 tbsp
salt, pepper
oil - 1 tbsp (dont use oil , if using fish canned in oil)
1. mix all items together. shape into cutlets.
2. bake in a oven at 180 degrees for 20 minutes.
3. serve hot with ketchup.

Palin flour = RIECE FLOUR or MAIDA FLOUR ?
