Roasted Brinjal Masala (kugan)
[tscii]There are many ways the roasted brinjal is cooked.
We normally will make patchadi out of the roasted brinjal.
A friend showed me how to make roasted brinjal masala.
I will post both the recipes.
Its always best to use 1 big brinjal, as the flesh will be soft.
ROASTED BRINJAL MASALA
Ingredients:
500 grms brinjal choose 1 big one
2 onions chopped fine
2 big tomatoes chopped fine
1 tbs garlic chopped fine
1 tbs ginger grated fine
2 green chillies chopped
˝ tsp coriander powder
˝ tsp cumin powder
˝ tsp red chillie powder
˝ tsp garam masala powder
1 tsp sugar
Little lime juice
Salt to taste
˝ tsp cumin seeds
2 tbs oil
2 tbs chopped coriander leaves
Method:
Apply oil all over the brinjal . Insert a skewer through the brinjal .
Roast on a gas top, keeping the flame very very low.
Keep rotating the brinjal . The skin on the brinjal should be charred. When you touch the brinjal will feel very soft.
Remove it to a plate. When cool peel off the charred skin.
Mash the cooked brinjal and keep aside.
Heat a wok with the oil, add in the cumin seeds.
When it splutters, add in the onions and sauté till they turn
lightly brown. Add in the garlic and ginger and fry for a minute.
Add in the tomatoes, and green chillies.
Stir nicely and cook, add in all the powdered spices.
Keep stirring so that it does not stick to the wok.
Sprinkle some water if needed.
Add in the cooked mashed brinjal , salt and keep on stirring.
The brinjal should be nicely mixed with the spices.
Add in the sugar and lime juice. Add in the chopped coriander leaves.
Stir nicely and remove.

Roasted Brinjal Patchadi (kugan)
This is how we cook roasted brinjal patchadi.
ROASTED BRINJAL PATCHADI
Ingredients:
500 grms brinjal choose 1 big one
1 big onion chopped
1 tomato remove seeds chopped
2 green chillies chopped
5 pips garlic chopped fine
1 tbs finely chopped ginger
2 tbs of thick coconut milk
2 tbs chopped coriander leaves
Little lime juice
Salt to taste
Method:
Roast the brinjal and remove the charred skin.
Mash it nicely with a spoon.
Now mix all the above ingredients in a bowl, except the coconut milk.
Add in the cooked mashed brinjal with the ingredients.
Keep it in the fridge. Add the coconut milk at the time of serving.
A very tasty patchadi. Try it once.

Thanks Dev, I asked her and she said it was taught by an North Indian aunty, who lives near her house.
No name was given for the dish.
Next time I make sure to find out about the name.

Simple Tomato Curry (kugan)

SIMPLE TOMATO CURRY
Ingredients:
2 big tomatoes chop fine
1 big onion chopped fine
1 tsp garlic paste
1 tsp ginger paste
2 tsp chillie powder
˝ tsp garam masala powder
1 cup coconut milk or low fat milk
Little coriander leaves chopped
Salt to taste
1 tsp oil
Method:
Heat oil in a wok, add in the chopped onions.
Sauté well, add in the ginger and garlic paste.
Sauté till the raw smell goes.
Now add in the chopped tomatoes and salt.
Stir and cover and simmer for 5 minutes.
Add in the chillie powder and garam masala powder.
Stir and cook till the tomatoes are mushy, and oil separates.
Add in the thick milk, simmer for 5 minutes.
Once the gravy is thick, remove and garnish with
cut coriander leaves.
A quick curry for dosais and idlis.

selvika,idiyappa biryani is my husband's favourite one.His BIL used to buy that one for him whenever we go to their house.It is a very famous recipe in night stalls in tirunelveli i guess.So plz do post the recipe once wen u r absolutely free.
