    Mor kuzhambu

    Dear Kugan, I made the mor kuzhambu following your recipe exactly--rombo super!! Also made masala vadai, kootu, sambar, kothavarakkai curry, gulab jamun, and laddu. My guests loved the mor kuzhambu and took home a container of it.

    MIXED FRUIT CAKE (kugan)

    I did this simple cake today. It turned out very soft and nice.
    Try it please. Kugan98



    MIXED FRUIT CAKE

    Ingredients:

    3 cups all purpose flour
    3 tsp baking powder
    ½ tsp baking soda
    1 ½ cups sugar
    2 cups curds at room temperature
    1 cup oil
    2 tsp vanilla essence
    6 tbs mixed fruit , mix with 2 tsp of flour

    Method:
    Pre heat the oven to 200 degrees C for 10 minutes.
    Grease and flour an 8 inch baking pan.

    Cream sugar and curds, until the sugar is completely dissolved
    Add in the baking powder and baking soda and combine well.
    Leave aside for about 4 minutes. Bubbles will appear.

    Now add in the oil and essence and combine well.
    Now slowly add in the flour little by little.
    Blend well with the curd mixture.

    Lastly add in the mixed fruits.
    Now pour the batter into the greased pan.
    Bake in the preheated oven at 2oo degrees C for about 10 minutes.
    Then reduce the temperature to 175 degrees C.
    Bake for about 30 minutes or till a toothpick inserted into
    the cake comes out clean.

    Cool the cake for about 20 minutes and then overturn onto a plate.

    Kugan, thanks for the super fish recipe and the cake looks beautiful.
    At first I doubted the recipe as it had no coriander powder.
    My family asked me to have full confidence and try.
    I made the curry for dinner yesterday.
    It turned out super. Thanks a lot. Hope you will post the Goan curry too.
    One more request Kugan I heard there is another Kerala fish curry which will look yellow in colour.
