Thanks Shanthy for your nice compliments and post.
Shanthy, your grinder must be wet not dry.
I am sure you would have just washed before grinding.

Your urad dal will have little liquid in it after straining.
add about 6 tbs of water in the grinder.
add little urad dal and switch on the grinder.
keep adding little urad dal with little sprinkling of water,
every time. When you find the urad dal very very thick, sprinkle little water. This way you will not get watery dough.
The dough will be spongy.

Never add rice or flour to the dough. your vadai will be little hard.
Vadais made without flours will be very spongy to eat.
This is how I make Shanthy.
There may be different ways and style.
So forgive me if I am wrong.

Note : If your dough is watery, there is no choice but to add little flour. I have no experince, you can try with urad dal flour.
Rice flour will make your vadai hard. Some say you get crisp vadai by adding rice flour. Sorry I have not tried.

POTATO BONDA

Ingredients:
The Filling:

5 big potatoes boiled till ¾ cooked
1 small onion chopped
4 green chillies chopped
¼ inch ginger chopped
¼ tsp tumeric powder
1 tsp urad dal
½ tsp channa dal
½ tsp mustard seeds
Little coriander leaves chopped
Little curry leaves chopped
Salt to taste
Little lime juice

For Batter:
1 cup besan flour
¼ cup rice flour
Little red chillie powder
A pinch of baking powder
A pinch of asafetida powder
Little salt
Oil for frying.

Method:
Peel and mash the potatoes well.
In a pan add 1 tsp of oil, when hot, add in the mustard seeds,
urad dal and channa dal. Fry a bit, add in the onions, green chillies
ginger, and curry leaves , sauté for a little while.

Mix all these with the mashed potato, add also the coriander leaves, lime juice and salt. Shape the into lime sized balls and keep them aside.

Mix all the ingredients in the batter section, except the oil.
Add enough water to make a thick batter. A bit thicker than dosai consistency.

Heat oil in a wok for deep frying.
Take the ball one at a time and dip in the coating batter.
Slip each one carefully into the hot oil.
Fry them until they turn golden brown.
Serve hot as it is or with coconut chutney.

potato bonda looks yummy, i do make like this. But now afraid of oil coz i made too much snacks for diwali. so break for atleast couple of months.

Suvai sent me this recipe.
I made this for lunch today.
I made potato masala and onion raitha as side dishes.
Every one enjoyed it.

SUVAI"S RECIPE
Here is one of our family fav recipes ;
Mint Rice
1 big bunch of mint
1 big bunch of kothamali
1 Tblspn each of garlic & ginger paste
1Tblspn Corriander seeds (naan ithai podaamal thaan seiven nalla varum)
(Grind all the above & keep aside)

4 onions chopped fine
4 tomatoes chopped fine
6 green chillies (according to your taste)
3-4 cups cooked rice.

method: Heat oil/ghee put in Jeera & bay leaf, add cut onions till onions become slightly pink. Now add the ground masala & keep turning till the oil oozes out. Add the chopped tomatoes & salt.
Cook well till it becomes thickish (mothai maathri varanum) now add in the cooled cooked rice & mix.
Enjoy with Thayir pachadi & vadam & vathal. or appalam.

Hi,
I thank u all for the Welcome given to me.I have little experience in cooking as i started to learn cooking after marriage.I bought cookery books and collected recipes in net(major credit goes to this hub).So I dont have any recipe.But i will try the recipes posted in this hub and i will give my compliments.
Kugan can u post all the radish recipes told by u.I like radish very much and i am eager to try your recipes.Thanks!

I had them all in my laptop. Now they say the laptop is corrupt

OATS PONGGAL
Ingredients:
1 cup oats
1/4 cup pan roasted, boiled mung dal (less if you like)
1 tsp coarsely crushed black pepper
½ tsp cumin seeds
¼ tsp asafotida powder
1 tsp finely grated ginger
2 sprigs of curry leaves
2 tsp ghee or oil ( also less if you like)
Salt to taste

Method:
Cook oats with little water, so that it is thick.
Add the cooked mung dal, and salt.
Mix nicely so that the oats and dal are well combined.
Remove from stove.
In a wok, add the ghee.
Add the pepper, cumin seeds .
Now add the ginger, curry leaves and asafetida powder.
Now pour the seasonings on the cooked oats.
Mix well and serve.

OATS UPMA

Ingredients:

1 cup rolled oats (not instant)
1 cup mixed veges chopped (optional)
1 medium onion chopped
3 green chillies chopped
1 small piece of ginger chopped fine
Few curry leaves chopped
Little coriander leaves chopped
2 cups of water
Salt to taste
1 tbs roasted cashew nuts.

Seasonings:
2 tbs ghee or oil
½ tsp mustard seeds
½ tsp channa dal
½ tsp urad dal

Method:
Dry roast the oats in a wok for few minutes.
Heat the ghee in a wok, add in the mustard seeds, channa dal and urad dals. Fry for a second.
Add in the onions, ginger, and green chillies.
Sauté for few minutes, add in the curry leaves.
Add in the mixed veges, and stir nicely.
Add in the 2 cups of water and about ¼ tsp of the salt.
Cover and let it come to a boil.
Reduce the heat and add in the roasted oats,stirring continuously.
Cover the the oats and let it cook for about 5 minutes.
The oats should have absorbed all the water.
Give a stir, add in the coriander leaves and the cashew nuts.
Serve warm with any chutney.

Note: You can cook this upma without the veges also.

Dear Kugan

Thank you for your comments and suggestions. I drained the soaked ulunthu in the strainer before putting in the grinder. That must have been left the ulunthu very dry. I will remember your suggestions next time. For four cups of ulunthu I added three table spoons of rice flour. It didn't show much difference but I was able to make good shaped vadais. Potato bonda looks very tempting Kugan. May be I will try for the weekend and forget about the waist line.

Its been ages since i posted some recipes. I am so sorry. I am currently in Spore for 3mths Holiday. Therefore, I will not be able to post any recipes till Jan. As my mum will do all the cooking and i am not allowed into the kitchen. "Romba chellam" So.. I will try my level best to post amma's Recipes.

I will make sure i visit our HUB regularly. Miss u guys and happy belated Diwali....

Selviem, normally you boil 11/2 cups of water.
You keep some boiling water by the side.
if you find the water not enough, add little more water.
you do not want your pongal to be too kola kola.

[tscii] There are two different styles in doing this simple radish raitha.
This is the first one.



RADISH RAITHA (1)

Ingredients:

1 radish skinned and grated
1 cup yogurt
1 red onion chopped fine
1 tomato chopped fine
2 green chillies chopped fine
1 tsp oil
½ tsp cumin seeds
Few curry leaves chopped
Salt to taste

Method:
Grate the radish, add in the chopped onions, tomato, salt
And green chillies.
Heat oil in a pan add in the cumin seeds and curry leaves.
Add it to the radish mixture.
Finally add in the curds and mix well before serving.


Note: Add the curd according to the consistency you want.
Some people like to saute the grated radish in a tsp of oil to get
rid of the raw smell. I use it raw.

We do this style when we have guests for lunch.


RADISH RAITHA (2)

Ingredients:

300 grms radish grated
1 cup fresh yogurt
2 green chillies
½ tsp cumin seeds
2 tbs grated coconut
2 cashew nuts
½ tsp mustard seeds
½ tsp urad dal
1 red chillie broken
Few curry leaves
Salt to taste.
2 tsp oil

Method:
Heat 1 tsp of oil in a pan. Sauté the grated radish till the raw smell goes.
It will only take about 2 minutes. The radish must be crunchy.

Grind together green chillies, cumin seeds, grated coconut,
And the cashew nuts to a smooth paste using very little water.

Beat yogurt with salt, add in the paste and mix well.
Add in the sautéed radish.

Heat a pan with 1 tsp of oil, add in the mustard seeds, urad dal, broken red chillie and the curry leaves. Pour on the raitha.

Chill and serve.

VAALAI POO KOOTU

Ingredients:
1 vaalai poo
100 grms toor dal soaked and boiled till cooked.
1 big onion chopped
4 pips garlic smashed.
1 small piece of ginger cut fine
3 dried chillies cut into ' pieces
tsp mustard seeds
1 tsp cumin powder
tsp tumeric powder
1 sprig curry leaves
cup curds
salt to taste oil.

Method:
Mix the curd with a litre of water in a basin.
Remove the maroon coloured sheath of the flower.
Remove a bunch of florets at a time.
Remove the stamen and also the white pinkish petal.
Cut the florets into small pieces. Soak them in the curd, water mixture.
This is to avoid the flowers turning black.
Heat oil in a wok. Add oil, then the mustard seeds.
Add in the onions, garlic, and ginger .
Add in also the dry chillies and curry leaves. Stir nicely.
Mean time wash the flowers, once and squeeze out the water.
Now add the flower, cumin powder, and tumeric powder.
Stir fry nicely, add the cooked dal, salt and let the flowers cook.
Sprinkle some water if needed, otherwise the liquid in the dal is enough.
Remove from stove when cooked.
Serve with rice or roti.

y/day we went to a small hotel here where they served adai. The adai was crispy as well as soft. I could make out that they have used black ulundhu and more of rice.

My son asked me idhu madhiri adai veetla panna mudiyuma - nu.

Help pannungo please.....

Engum pogalai pa. I read all the posts. Pudusa try panra mood than illai. Edho regular cooking, to the extent I know.

I did not do anything for deepavali.

My son is a very poor eater. 90% vishayangal pudikkaadhu. So I have to repeat only within the 10%. thats my problem.

So when he liked that adai, i thought of doing, but proportions therile. So this is the place to turn to...

Its always kasappu whenever i buy over here. so only during my visit to india, my mom will cook vaalai poo and i will eat nicely. u tempted me by posting vaalai poo kootu.

i make adai in 2 types.
method i
========

soak for four hours, grind coarsely in the mixie with 3 dry red chillies, saunf - 1/2 tsp, ginger - 1/2". Mix with salt, grated coconut, chopped onions, coriander leaves, curry leaves, turmeric powder. mix nicely and make adai. Serve it with coconut chutney.

Method : 2
==========
Idli rice - 1 cup
ulundhu - 2 tsp
pasiparuppu - 2 tsp
yellow pumpkin - 2 tblsp chopped

soak for four hours, grind coarsely in the mixie with 3 dry red chillies, saunf - 1/2 tsp, ginger - 1/2". Mix with salt, grated coconut, chopped onions, coriander leaves, curry leaves, turmeric powder. mix nicely and make adai. Serve it with coconut chutney.

Method 2 will be softer than method 1
try it out.

Selviem, I am not an expert, anyway I will tell you what I know.
I think the size of the flower does not matter.

Normally there will be some bitterness in the flower.
You soak the chopped flowers in butter milk and little salt, for about half an hour.
then squeeze out all the liquid. The flower will not be that bitter.
Moreover with all the dals and spices, you will not feel the bitterness. Try and see.

RADISH PORIYAL

Ingredients:
300 grms radish grated or chopped
2 tbs of boiled moong dal. (not over cooked)
Salt to taste
1 tsp of oil

Seasonings:
¼ tsp mustard seeds
¼ tsp urad dal
Few curry leaves
2 shallots sliced
2 green chillies or dry red chillies sliced
1 tbs grated coconut.

Method:
Heat a wok with the oil, add in the mustard seeds, and urad dal.
Let it splutter, add in the sliced shallots, green chillies, and curry leaves. Sauté well.

Add in the grated radish and the boiled moong dal.
Stir well, cover and let it cook for 5 minutes.
(you need not add water as there will be enough liquid in the radish)
Add salt and stir well, finally add in the grated coconut.
Fry well and remove. This is a dry dish.

hello nga sudha india....adai is one of my fav too ;-)...that too if u can add venthaya (fenugreek) leaves ....its even more tasty....


Selviem.....ya sometimes the vaazhai poo we get here is also bitter...so i add little tamarind to it to cover up the bitter taste...it sometimes works....try panni paarunga :-)

[tscii] Dev, this is for you. No frying, just steaming.


STEAMED BLACK BEAN PAU

Ingredients:

500 grms low protein flour
50 grms dry yeast
100 grms sugar
1 tsp baking powder
¼ cup of vegetable shortening
1 to 1 ¼ cup of warm water

Method:
Dissolve the dry yeast in half of the warm water.
Add sugar to the mixture.
Place the flour in a large mixing bowl, add in the vegetable shortening.
Pour in the yeast mixture.lightly mix using your hand.
Turn out dough onto a smooth surface.
Knead the dough until it is well mixed. Cover it with a plastic wrap to prevent it from drying.

Take about ¼ of the dough. Cover the rest.
roll this piece out into a long roll, about 2 inches in diameter.
Cut off small portions off every 2 inches. Roll the small dough into balls.
Flatten each ball into a circle, place 2 tsps of the black bean filling in the centre. Close off by shaping them into a ball again.

Place the pau on to a small square pieces of wax paper.
Do this to the rest of the dough. Let the pau sit on a platters
Covered with plastic wrap for about an hour, in order for the
dough to rise.
Steam the pau in a steamer for about 10 to 15 minutes.
The pau should come out white and fluffy. Serve hot.

Note: you can use any kind of filling for this pau.
Sweet coconut filling, egg jam or even non vege filling.

You can even use all purpose flour, but your pau will not
look that white or fluffy.

Recipe for making black bean paste or red bean paste is
Given in Kugan’s Kitchen Part 1 on page 27.

My friend Karthi Subra from Delhi requested by mail for
raagi upma. (She has been trying for a year to become
a hubber in this forum without success)
First I tried the normal method of making upma.
It turned out kola-kola and the flour was not fully cooked.
I tried another method and its o.k a bit.
If anyone has a fool proof method, please post it.

RAAGI UPMA

Ingredients:

1 cup raagi flour dry roast it
¼ cup sooji dry roast it with little ghee
1 small onion chopped
1 green chillie chopped
2 tbs of grated coconut (optional)
A small piece of ginger chopped
Little coriander leaves chopped
1 tbs of ghee
Salt to taste

To season:
½ tsp mustard seeds
½ tsp urad dal
1 sprig curry leaves

Method:
Combine the raagi flour and sooji with salt.
Sprinkle little water at a time and mix gently with your
hands to form like breadcrumbs, or puttu flour.
Steam the mixture till it is cooked. Keep aside.

Heat a wok and pour the ghee, add in the mustard seeds,
and urad dal. Let it splutter, add in the curry leaves.
Now add in the onions, green chillies, and ginger.
Sauté well, add in the steamed raagi mixture.
Stir well, add in the coconut scrapings, mix well.
Garnish with cut coriander leaves and serve warm.

CRISPY SOFT ADAI

Ingredients:

¼ cup channa dal
¼ cup urad dal
¼ cup toor dal
1 cup rice
2 dry red chillies
Little ginger
Little coriander leaves
Little curry leaves
A pinch asafetida powder
Salt
5 shallots chopped

Method:
Soak the lentils, rice and dry red chillies for about 3 hours.
Add rest of the ingredients, except the chopped onions and
grind to a coarse batter. It should be coarse to get crispy adai.
Add the chopped onions, mix well. Keep for an hour.

Heat a tawa and spread a ladle full of the batter.
Do not spread it too thin or very thick.
Spoon oil around the adai. When it is cooked on one side,
flip it over and cook on the other side.
Both the sides should be light brown in colour.
The cooked adai will be crisp on the outer side and soft inside.
Serve with sambar, avail or any chutney.


Note: I have added little crushed black pepper, its optional.

Its a good idea to add in finely cut greens or veges.

Authentic Adai:

Pachai arisi - 1/1/2 cup
Kadalai parupu - 1/4 cup
thuvaram parupu - 3/4 cup
uluntham parupu - 1/2 cup
ithil vara milagai thanileye oora pottudunga

oru 2 mani neram oora vitu konjam kara kara nu araithu vaikavum ithil venthaya keerai /or murungai keerai/ or peerkangai/ ithil marakaamal perungayam (kati) podithu podunga rusiyo rusi thaan ..add chopped karuvepilai also plz.


Ithiley masala adaiyum seiyalaam:
u can add pattai/lavangam/konjam sombu poditu pottu/ onions fine ah chop panni pottu........kothamalli karuvepila naruki pottu...poondu podisa naruku pottu.....vaarthu paarunga avolo arumaiya irukum.
pottu senju paarunga...arumaiyaaa irukum...enjoy

kugan thanks for the tips, yesterday i bought vaalai poo let me try and let u know. i normally soak the chopped vaalaipoo in buttermilk without salt. this time let me try with salt. also as per suvai's suggestion i will use little tamarind also. Kids are so excited to clean the flower with me.

[tscii]Selviem, here is the radish kootu resturant style.
Let me know if it is any where near to what you ate.
You can do this kootu with snakegourd, cabbage, bottle gourd
or even beans.
Later I will post how a simpler version we do in the house.

RADISH KOOTU

Ingredients:

2 cups radish cut into small chunks
½ cup toor dal boiled well
¼ tsp tumeric powder
1 medium onion sliced
2 green chillies sliced
Little coriander leaves chopped
2 tbs tamarind juice
1 tsp jaggery (optional)
Salt to taste

To dry roast and grind:
1 tbs channa dal
1 tsp urad dal
½ tsp cumin seeds
1 tsp coriander seeds
2 red dry chillies
¼ tsp black pepper
2 tbs grated coconut (do not roast it)
3 cashew nuts (do not roast)

To Season:
½ tsp mustard seeds
½ tsp urad dal
¼ tsp cumin seeds
1 sprig curry leaves
1 tbs of ghee or oil

Method:
Boil the toor dal with the tumeric powder well. After it is cooked see that there is about 2 cups of the toor dal water with the dal.
Heat a pan with 1 tsp of oil, sauté the cut radish chunks for
about 5 minutes. Keep aside.
Grind the roasted ingredients with the coconut and cashew into a paste.
Keep aside.

Heat a pot with the ghee, add in the seasoning ingredients.
Once they splutter, add in the onions, sauté well.
Add in the green chillies, the radish chunks.
Cook for a minute, add in the cooked dal with the stock.
Add in salt and the tamarind juice. Let it boil for 5 minutes.

Now add in the ground paste and mix well. Add in the jaggery.
Let it come to a nice boil once.
The consistency should not be very thick nor watery.
You can add little water if it is very thick.
Taste for salt, remove and garnish with the coriander leaves.

For the past 2 years I have been using brown rice in ou house.
In the begining We found it difficult to eat, now we are used to that.
I found this piece of information in the net.

A study published in the American Journal of Clinical Nutrition underscores the importance of choosing whole grains such as brown rice rather than refined grain, i.e., white rice, to maintain a healthy body weight. In this Harvard Medical School / Brigham and Women's Hospital study, which collected data on over 74,000 female nurses aged 38-63 years over a 12 year period, weight gain was inversely associated with the intake of high-fiber, whole-grain foods but positively related to the intake of refined-grain foods. Not only did women who consumed more whole grains consistently weigh less than those who ate less of these fiber-rich foods, but those consuming the most dietary fiber from whole grains were 49% less likely to gain weight compared to those eating foods made from refined grains.

This is Aarthii frm Delhi.I have been a silent obsever of this thread for the past 8 to 10 months.By today i got the activation and would like to be a part of it. :D

She asked me to have Sambar Saadham and I said Yes, thinking she has already made. Immly, she placed a cooker and started cutting some few vegetables. I told her that I should go home and make dinner, to which she said, wait for just 10 mins.

She prepared Sambar saadham and gave me in a tiffen box in just 10 mins and said, have this for dinner too.

The reason for writing all the above is, it was really that quick……. I watched her do and I prepared it yesterday at home. (En veettu Vasishtar kooda paaraattinaar :lol:)

SAMBAR SAADHAM

Place the pressure pan on flame and pour oil – 3 tbsp
Add all the following :
Mustard
Vendhayam
2 sliced green chillies
One big onion, and few pieces of other vegetables
(Can add all possible vegetables for sambar)
Turmeric powder, Sambar powder, Chilli powder, Dhania powder, Hing
Add Curry leaves and mix for 2 mins.
Now add washed rice and thoor dal to the vegetables and mix
Salt to taste
Add tamrind water and normal water.
(Water level : For cooking rice + dal and 1 cup more)
Add one tbsp of ghee
Close the pan and leave it for 3 – 4 whistle.

Open the pan once it is ready, add coriander leaves and mix and this is ready to serve.

(Adding brinjal, drumstick and raw mango piece will enhance the taste – My friend’s tip)

Red unpolished rice can be difficult to eat. But brown rice is much nice nutty, chewy and far tastier than pristine white.
Health foodies in the West eat brown rice, swanky California restaurants serve it, and more of us are discovering it. Health food stores sell brown rice too.
So why is brown rice still generally untried? Perhaps it's because white rice is easy to chew and looks clean. And why would you want to cook brown you want to cook brown rice when it takes four times as long to cook as white rice?
Brown rice is fed to infants because it's nutritionally far superior to white rice. It's also anti-cancer, anti diabetes and anti cholesterol because it's so rich in fibre. To stay healthy, we need about 30g of fiber a day. Brown rice has over three times the fibre of white. One cup of cooked brown rice has 1g of fibre whereas white rice has only 0.3g.
Brown rice has also, gram for gram, four times as much iron as white rice, double the calcium and vitamin E. Milling strips white rice of all these white rice of all these nutrients.
The difference between the red unpolished rice in provision shops and the brown rice in supermarket is the degree of milling. Nutritionally, They are about the same. The red is Thai rice and the brown from California or Australia.
If you want to try brown rice, buy a small bag. Brown rice doesn't keep. Weevils prefer nutritious brown to refined white.

I am sure all will be having indigestion problems, after taking too much of the Deepavali goodies.
Here is a simple home remedy. It will also help
to loose weight if consumed daily in place of normal drinking water.


CUMIN WATER

Ingredients:
2 tbs cumin seeds
1 litre water.

Mehod:

Heat a pan and dry roast the cumin seeds till you get
a good aroma. Do not roast till black.
pour in slowly the water and let it come to a boil slowly.
keep it in the sim for about 10 minutes.

The water will turn yellowish in colour.
Remove and strain, you can drink it while still warm or cold.
Dilute it if you find the taste a bit bitter.
For indigestion drink it as it is.

Actaully,in my school going days,one of my friend she is frm kerala,she used to bring this water in her water bottle and she used to say,that in her home they all will take this water only instead of normal water.

I used to take some frm her.Mostly all my friends used to drink frm her bottle.

She used to tell that this water will reduce the body heat .

But today i got the method of it frm u .Am going to make it by today itself.thank u akka.

There are many ways to do this salad.
This is how I do.

SPROUTED MOONG SALAD

Ingredients:
1 cup sprouted moong dal
1/2 cup cucumber chopped into cubes (remove seeds)
1 tomato chopped into cubes (remove seeds )
1 green chillie chopped
1 onion chopped
4 strands of coriander leaves chopped
1/4 tsp of pepper powder
lime juice to taste
salt to taste

Method:
Combine all the ingredients in a bowl. Toss well.
Chill and serve for lunch.

[tscii] Selviem here is a simple recipe to use your steamer.


STEAMED RICE AND FRESH COCONUT BALLS

Ingredients:
2 cups raw rice
1 cup grated coconut
Salt to taste
2 tbs oil
1 tsp mustard seeds
1 tsp urad dal
1 tsp chana dal
3 dried chillies cut into pieces
2 sprigs curry leaves
¼ tsp asafetida powder

Method:
Soak the rice for 3 hours and drain.
Combine the rice, coconut, and salt in a blender.
With just enough water, grind it to a thick dough.

Heat oil in a heavy skillet, and add the mustard seeds,
Urad dal and chana dal. Fry until they turn golden brown.
Add in the dry chillie, curry leaves and asafetida.
Stir in the ground thick dough with a ladleful of water
And cook over low heat, stirring continuously until
It thickens and leaves the sides of the skillet.
Remove from the stove and let it cool.

When it is cold, shape the dough into small balls.
Then use a steamer and steam the rice balls in a single layer.
Steam them for about 15 minutes.
Serve with sambar or coconut chutney.

As devka stated it is kozhukattai thaane ka.My mom used to make often.She will press it with her hands instead of making like balls.

Steamed Sweet Rice Kozhukkata
Ingredients:
1 cup raw rice soaked
½ cup brown sugar dissolved and strained
2 tbs thinly sliced fresh coconut
1/3 cup ghee
½ tsp cardamom powder

Method:
In a blender grind the rice along with brown sugar,
With just enough water to form a thick batter.
Toast the coconut in a tsp of ghee. Keep aside.
Combine the rice batter and the rest of the ghee
In a non-stick pan, and cook the mixture over a medium
Heat, stirring all the time.
As the mixture thickens, add the sliced coconut
And cardamom powder.
Keep on stirring till the mixture has cooked down to a dough.
Remove from stove and let it cool.
Shape the cooked dough and steam it for about 20 minutes.

NOTE: In my family this kozhukkata is made by the athai, when the
Child has has the first tooth.
The child is made to sit on a decorated stool and the kozhukkata
Is showered on the head of the child. Elders and children
Pick up the kozhukkata and there is much fun in the house.

BREAD UPUMMA
Ingredients:
4 slices of stale bread cut into ½ inch cubes
¼ cup onions chopped
¼ cup tomatoes finely chopped
1 green chillie chopped
¼ tsp sambar powder
Salt to taste
¼ tsp mustard seeds
¼ tsp cumin seeds
1 tsp oil
Little chopped coriander leaves.

Method:
Heat a wok, add in the oil.
Add the mustard seeds and cumin seeds.
Add the onions, and tomatoes, cook well.
Add the sambar powder, salt and the green chillies.
When the tomatoes are well mashed.
Add in the bread cubes and mix well.
See that all the bread cubes are coated with the masala.
Remove and sprinkle with the coriander leaves.

kuganka,sweet kozhukkattai is tempting.

As like how who have shaped this sweet kozhukattai,like that my mom used to shape that spicy one also.

Selviemka,as u said,kuganka's radish poriyal is really such a nice dish.At my home also ,my husband and my lil prince had it fully by telling that it is yummy.

normally at my home,we both dont like radish,but this time ur poriyal we liked a lot akka.First time i made a poriyal with radish.its really good.thank u once again.

[tscii] This is another slowly disappearing palagaram in our modern homes. Try once in a way.


SUGIYAN

Ingredients:

For the filling:
1 cup whole moong dal
1 cup sugar
¼ cup grated coconut
½ tsp cardamom powder
A pinch of salt.


For coating:
1 cup urad dal soaked
2 cups rice soaked
little salt
oil for frying.

Method:
Boil the moong dal in little water so that it is about ¾ boiled.
Allow almost all of the water to evaporate.
Mash it nicely.combine the cooked dal with the sugar.
Cook on medium heat stirring continuously.
Add in the coconut cardamom powder and salt.
Cook till it forms a ball. Remove and keep.
When cooled it will be thick in consistency.
Take the moong dal mixture make them into lime size balls.

Grind the urad dal and rice to a fine paste.
It should be liitle thicker than dosai consistency.
Add the salt, mix well.

Heat oil in a wok for deep frying.
Take the ball one at a time and dip in the coating dough.
Carefully release each one at a time into the hot oil.
Fry them until they turn golder brown.
Serve with a hot cup of tea.


Note: you can even make the filling with channa dal
using the same method.

STEAMED FISH

Ingredients:
1 whole promfret about 500 grms
½ a lime
3 cm fresh ginger cut into strips
4 garlic pips cut into strips
2 fresh red chillies cut into strips
2 fresh mushrooms sliced
1 tomato sliced
2 tbs of soy sauce (more if needed)
1 tsp coarsely ground black pepper
Salt to taste
1 tsp sesame oil
1 stalk spring onions cut into 4 cm lengths
1 sprig coriander leaves
1 piece of banana leaf (optional)

Method:
Clean the fish of its fins and stomach contents.
Keep the fish whole with head intact.
After cleaning and washing fish, pat it dry.
Make two cuts on each side of the fish.
Now rub the fish with the lime juice, pepper powder and salt,
all over and in the cavity of the fish.
Put some ginger and garlic strips in the cavity of the fish.

Put the piece of the banana leaf on a heatproof dish.
Place ½ of the ginger, garlic on the banana leaf.
Place the fish on top of the ginger garlic.
Now sprinkle the rest of the ginger garlic, also the fresh red chillies,
Mushrooms, tomato slices, and spring onions, on and around the fish.
Drizzle the sesame oil, and soy sauce over the entire fish.

Steam fish over rapidly boiling water for about 15 minutes, or until
the eyes of the fish pop out. (This is an indication that the fish is cooked)
remove, garnish with coriander leaves and serve while hot.

Note: The banana leaf helps to remove little of the fishy smell.
You can use garlic oil if you do not like sesame oil.

Dear friends, I would like some help from my Hub friends.
All these while I have been serving non-veg lunch and dinners for friends. Also non-veg items for children's birthday parties.
Since we are vegetarians now, I am in a delima.

I would like some ideas of what to serve for a good lunch, or dinner
for guests when they are invited for functions.
As for children's party, normally they like fried chicken, chicken lollipops,
nuggets, sausages, crab balls and items like that.
What do I do vegetarian items for the kids.

Hmm... u can try chilly mushrooms, dry manchurian varieties, bird's nest, veg balls, spring rolls, paneer tikkas, chaats like masala puri,sev puri, dahi puri,corn bhel,mini samosa, cutlets,mini puffs, sandwiches, stuffed parathas...

pls don't ask me for recipe for the above... I eat better than cooking...;) :lol:

onga sukiyan looks exactly like how my aunt makes...ipadi rusiya samaika samaika u r tempting us too to explore & experiment in our kitchens in new ways thank u !!!

for kids parties : chinna chinna poori's/ with masala filled......mini pizza's or made out of bread slices too....mini masala dosai's......with rice noodles u can make like masala upma or lemon rice pannara maathri pannalaam...thengai thiruvi pottu sakarai or vellam thoovi add elakaai podi sweet aagavum seiyalaam.....u can steam vegetables cut into different shapes & sprinkle with roasted jeeragam powder & salt...romba tastya irukum......macroni as pasta...or salad with 9 beans.....as such are a few ;-) hope it helps.......sweet normally quick cheese cake (frozen no need to bake ) is the best....for drink...u can make fruit smoothies or punches....

u can also spread green chutney / orange chutney /red chutney made out of bell peppers & spread it on sandwich bread & roll it & put a toothpick....

one can also make fruit tarts ....tarts u can buy readymade & the fill in with seasonal fruits...i am sure kids will enjoy....:-)

Its just that, you have to have starters, main meal and desserts.

So the food must be suitable for everyone.
That's my main problem.

Thayir Roti:
Boiled rice flour - oru cup
Pottu chappathi maathri pisaiyum alavuku sour curds add panikonga coconut scrappings or small keethu pottu coconut, chopped small onions, green chillies, ginger grated, kothamali & karuvepilai cut mix all this with the rice flour & curds make it into small small round chappathis & thavala pottu ennai vitu cover panni cover panni cook panni edunga ( adai vaarkiraar pola )

ithuku coconut/greenchillies/little tamarind/small onions ellaam coarse ah araithu chutney seiyunga...u need not thaalichify for this with kadugu etc. Wink

But before that let me tell you a short anecdote. :D

Once upon a time there was a man in US who one day decided to forego meat. As a new vegetarian he was hard pressed to find good food what more in the US. He never gave up and continued being a vegetarian.

One day, a friend told him that it was easier to go with the flow and that it would be better for him to become non-vegetarian than to convert the nons to become vegetarians.

He took up the challenge and told his friend that he will make sure that in his life time a majority of americans will have at least one vegetarian meal a day!

And he succeeded!!!! :yes:
Do you want to know who this white guy was? And how he succeeded in making majority of americans vegetarian for one meal a day?

His name will tell you everything. His name is Kellogs! :D

K, every once a while, I do a buffet breakfast in my house for the children. The children love the idea of being able to eat what they want and at their own sweet time.
Your can serve a good vegetarian spread without appearing to. :)
Presentation is everything... so bring out your best dinner ware and cutleries to make it memorable.

Have lots of fresh milk and different kinds of cornflakes. To make it more exciting include some baking items like chocolate chips, almonds, strawberries, etc.

Make tiny but great looking cheese sandwiches. Use salad leaves, cucumber and tomato for decorations as well.
If you want you can make vegetarian omelette sandwiches too (but this will make it look really vegetarian.)

Fry some samosas, curry puffs and spring rolls. You can get all these frozen at the supermarket.

Make your own garlic bread using french loaves.

Fry some noodles, for people who prefer something heavier. Bee hoon is the best.

For dessert, you can make different kinds of jellies. Include a can of fruit cocktail in your jelly to make it more nutritious.

Besides coffee and tea, get fresh fruit juices too. Orange juice will always be safe.
If kids are coming, keep a jar of ice cold chocolate milk.

tiny vege bajjis
fritters on a stick (corn, vege, tofu or even just onion and chilly) for variation use sujee flour instead of white flour. you can boil potatoes and add to the sujee mixture, to make it soft.

turnip fritters (diced turnip mixed with white flour, corn flour, onion chilly and salt) with chilly sauce

For dinner, you can offer some light tiffins, some thing exotic that you cant get at restaurants. Like mint parata, roti jala, badhura, etc.

For roti jala, use white flour, add water and mix well. Then add evaporated milk, yellow colouring & salt put it into a blender and blend well. Check the thickness of the batter.
When you make the roti jala on the pan, add some ghee with some pandan leaves. avalOthAn.

Serve with tomato and potato curry.

Selviem I used steamed ordinary rice flour.
The roti came out very well.
Have to ask Suvai about the boiled rice flour.

Good of NOV anneh to give the recipe for roti jala.
Normally I will use egg for the batter.
I did not think about trying without the egg.
Have to give a very big thanks to him.
I put away the roti jala mould thinking that it is of no use.

[tscii]Selviem here is a nice dish for childrens party.



CHICKEN LOLLIPOP

Ingredients:
8 chicken wings with skin
6 green chillies ground
¼ tsp pepper powder
¼ tsp gram masala powder
1 tsp ginger paste
1 tsp garlic paste
½ tsp chillie sauce
½ tsp soya sauce
1 tbs worchestershire sauce
1 egg
50 grms all purpose flour
1 tbs corn floursalt to taste
oil for frying
a tinge of red colour

Method:
Break each chicken wing into two parts at the joint.
Take each part and pull back the meat from one
end of the bone to the other carefully.
Make sure that you do not pull the meat completely out.
Put all the chicken lollipops in a bowl.
Add all the ingredients except the oil.
Mix the ingredients to the chicken and let it marinate for 2 hours.
The longer the better.
Heat oil in a flat saucepan.
Deep fry the chicken lollipops in the hot oil by holding the tip of the bone and placing the meaty section in oil.
Drain and serve with chillie sauce.

DEV"S RECIPE:
Sprout & carrot salad...This is just a variation of Karnataka's famous salad 'Kosambari'...

Sprout green moong dhal- 1 handful or less
Carrots-2 medium sized(shredded)
Salad cucumber-1/2(shredded)
Lemon-to taste
Coriander leaves-a few(chopped)
Green chillies(chopped) or chilli powder-to taste
Salt- to taste

Mix all the above & serve it a bit cool... Sprouts can be added to taste... Depends on how much of the 'thuvarpu' taste u can stand...

Variation: Can add yellow moong dhal (soaked overnight) instead of sprouts...

[tscii]Selviem as I promised you earlier I am posting a simplier
version of the kootu, which is normally cooked in our house.


CHOW CHOW KOOTU

Ingredients:
2 cups chow chow cut into small cubes
¼ cup channa dal or toor dal boiled well
Little tumeric powder
¼ tsp cumin powder
5 green chillies sliced
Salt to taste

To Season:
½ tsp mustard seeds
½ tsp urad dal
½ tsp cumin seeds
1 sprig of curry leaves
Little asafetida powder
2 tsp oil
1 tbs chopped coriander leaves

Method:
Heat a wok with oil, add in the mustard seeds, urad dal, cumin seeds,
curry leaves and the sasfoetida powder. Saute well.
Add in the green chillies, tumeric powder, cumin powder and the chow chow. Stir fry well for a minute.
Add little water, the boiled dal, and salt.
Cover and cook for about 5 minutes till the chow chow is cooked.
The consistency should be thick.
At this stage if you like you can add in about 3 tbs of low fat milk or
coconut milk. ( I did not use any)
Garnish with coriander leaves and remove.
Serve as a side dish.


This method can be used for veges like, snake gourd, cabbage,
Sorakkai, beans, ridgegourd , radish and many more.

CHICK PEAS SALAD.

1 cup of boiled chick peas.
1/2 cup of shredded salad leaves or cabbage
1/2 cup of shredded carrot
1 onion sliced
2 green chillies sliced finely

3 tbs thick curds
2 tbs of vegetarian mayonise ( or normal one)
2 tsp of olive oil
1/4 tsp pepper powder
a pinch of sugar
salt to taste.

Chill the veges and the sauce.
Mix as soon as the guests arrive.

When I run out of dosai batter, this is what I will do.
Make godamba dosais.



Godamba Dosai.

Ingredients:

2 cups of wheat flour
1/2 cup all purpose flour
salt to taste
water as required
1/4 cup oil or ghee.

Method:
Mix all the ingredients to a smooth dosa like batter.
Cover and let the batter rest for half an hour.
Then cook as you will the dosai.
Drizzle little sesame oil all around the dosai..
See that is lightly brown and a bit crisp, flip it over.
cook this side also.
Serve it warm with a good chutney, or gravy.

Kugan, pls post the thai salad recipes...:) Tasteless/less sour oranges are a good substitute for pomelo salad I guess...

For the godumai dosai: Try this variation.... instead of maida, add a lil white rava...adding rava helps make the dosa lil crispy & it's much easier to spread the batter too...

my salad will not have any dressing. thats why i am not posting, we take ice berg lettuce, cucumber with some unsalted, no oil olives in the afternoon. Also sometimes , we have steamed broccoli with diced tomatoes.
In the night, i do with some sprouts (moong dhal, chick peas (black or white) kidney beans, kollu,etc ) either one of these with shredded cabbage, red,orange,green, yellow bell peppers, little white onion, little tomato, little olives, little corn. this also without salt and no dressing.
we started this habit for past 3 years, still now by god's grace we are eating. But if say suggest to some friends, they are making fun of me. Actually it will be difficult for first week, then u will be used to it. but it is very good for health and filling too. u try it kugan.

Chickpea salad: U can add green chutney instead of the sauce... green chutney is nothing but cori, mint, g.chilly, baby onions, garlic/ginger(any or both),salt & lemon juice ground to a paste... adding boiled cubed potatoes to the chickpea salad adds to the taste in this case...

kugan i make wheat dosa like this.
wheat flour - 1 cup
powdered oats - 1 cup
rice flour - 1/2cup
besan (kadalai maavu) - 1 1/2 tblsp
grated carrot - 1/4 cup
then crushed ginger - 1 tsp
pepper, jeera - coarsely ground - 1 tsp
green chilly - 1 finely chopped
curry leaves - 1 tblsp finely chopped
coriander leaves - 2 tblsp finely chopped

mix with reqd salt and make like rawa dosa, it will be very crispy and very tasty.
same can done with ragi flour instead of wheat flour.
Also for rawa dosa also u can add oats powder. so it is very healthy.

Try this Sambar saatham, not so healthy, neither too quick to cook.
You can cook this once in a way, for any potluck.
It will be tasty. Kugan98


SAMBAR SAATHAM
1 cup rice
1 cup toor dal
1 small lime size ball of tamarind
3 teaspoons salt
2 teaspoons oil
2 teaspoons ghee
12 red chili peppers
4 green chili peppers
1 teaspoon fenugreek seeds
1 tablespoon coriander seeds
2 teaspoon mustard seeds
12 cashew nuts
1/4 cup grated coconut
Turmeric powder
Curry leaves
Asafoetida

Fry coriander seeds and 6 red chilies fenugreek seeds, and coconut in 2 teaspoons of oil. Cool and powder.

In a large pot bring 2 cups of water to boil. Wash and clean dal and add to the water along with a pinch of turmeric. Wash and drain rice. When the dal is half cooked, add
Vegetables such as , drumsticks carrots, potatoes, chow chow, brinjal etc may be added.

Add 2 to 3 cups of boiling water to the pot and stir in rice. Keep stirring to prevent scorching. Prepare tamarind water by soaking the tamarind in a cup of water. When rice and dal is cooked and most of the water is absorbed, add the tamarind water to the pot along with salt and stir. Cook until most of the water is absorbed. Remove from stove.
(. Add tamarind only after the vegetables have cooked. )


Heat a frying pan and add oil. Season with mustard seeds, red chilies. Add green chilies and curry leaves. Add this to the cooked rice and dal. Fry cashew nuts in ghee, add the powdered masala and stir this into the rice and dal mixture. Dissolve asafoetida in a tablespoon of water and add to the pot. Stir and mix well. Let it cook for a couple of minutes. Remove from stove. Add coriander leaves. When cooled, the dish will attain required consistency.

ok fine kugan. today afternoon salad in our house is , one layer of iceberg lettuce(7 big leaves, remove the center part and tear it with hands), on top 2 diced cucumbers, next comes the baby pink radish slices (7 pcs). This will salad will be crunchy and nice to eat. no salt and no dressing. Sometimes my husband will have this with salsa or chilli garlic sauce as a dip.

thanks a lot. ofcourse wheat dosa is healthy and tasty. nobody knows that i added powdered oats in that. Also i prepare chappathi, 1cup whole wheat, 1/3 cup of powdered oats, 1 tsp flax seeds powder mix it with warm water, 1 tblsp of skimmed milk. Chapathi will come very soft. Here i dont add salt.Finally after the dough is ready i add 2 to 3 drops of oil. keep this for 1/2 hour and make chapathi. It will come very nice.

kuganka,today our dinning table is fully filled with ur recipes only.I made ur radish leaves poriyal,Bottlegourd Kootu (without coconut) and groundnuts with brinjal.All were so yummy.We 3 liked all the stuffs very much.

Kottu is really good.My son liked the radish greens poriyal.Normally it will be a big thing for me to make him have greens.But today he had it by his own.Thanku akka.

good to hear that ur family enjoyed the dishes. Regarding oats powder, whenever i want i will grind in the mixier.
Also, whenever u make poriyal instead of using grated coconut , we can use soaked and drained soya granules. This is very healthy and tasty.

Another Of DEV'S Recipe.



Carrot Sandwich:

Onion-1/2(chopped)
Tomato-1/4th to 1/2(seeds removed & chopped)
carrot-1 big(grated)
Chilli powder & salt-as req
garam masala-1/4 tsp
Oil

Heat a tsp of oil...add the onions & saute till tansculent. Add the tomato & salt ,cook for a min...add the chilli powder & garam masala & cook for a few secs until U get a good aroma of the spices...Take care not to burn the spices... Add carrots & cook for a few more mins...Do not add water... Stuff this in between 2 bread slices & toast using a sandwich toaster...This tastes very good if wholemeal/softmeal bread is used in place of white bread.

[tscii]Dev, my friend told me that usually they will serve the papaya salad with cabbage leaves cut into squares.
You use the cabbage leaf to pick up some of the salad to eat.
Also chilled cucumber slices are served as the salad will be very hot because of the bird's eye chillie. So you pop a cool cucumber slice in your mouth to cool. :lol:
Here is the recipe


VEGETARIAN THAI PAPAYA SALAD

Ingredients:

2 cups green papaya sliced into thin strips
5 green beans chopped
¼ cup carrots cut into thin strips
¼ cup cabbage cut into thin strips
8 cherry tomatoes sliced into half
2 pips garlic smashed and minced
1 fresh red chillie minced
2 birds eye chillies minced
2 tbs soy sauce
1 tsp lime juice more if needed
½ tsp honey
¼ tsp salt
1 tsp olive oil


To Garnish
2 tbs roasted peanuts
Lettuce leaves
Slices of cucumbers
Slices of tomatoes.

Method:
Combine all the ingredients and toss well.
Mash together with a mortar and pestle. ( Thats how they do)
Or use your hand and mash it well.
Chill for at least 1 hour.
Add peanuts and serve cold on a bed of lettuce.
Garnish with cut tomato and cucumber slices.

Here is another Thai Salad using mangoes.


VEGETARIAN THAI MANGO SALAD

Ingredients:
2 medium firm mangoes, sliced into fine strips
2 green chillies minced
2 birds eye chillies minced
1 tbs coriander leaves chopped
1 tbs Thai basil leaves chopped
2 tsp honey or fine brown sugar
lime juice to taste
salt to taste
2 tbs roasted peanuts.

Method:
Toss together all ingredients thoroughly.
Allow the flavours to mingle for at least 30 minutes.
Serve.


Note:
In all these salads, the Thais use fish sauce.
Also dried shrimps are pounded and added for flavour.

STUFFED TOFU

You can serve this as snack or starter

6 pieces of square tofu (firm)
cucumber, deseeded and julienne
carrot, julienne
turnip, julienne
cup bean sprouts, blanched in salted water.
Oil

Deep fry tofus until light golden brown. Set aside to cool down. Cut the square tofu in half diagonally. The cut tofu will have a shape of triangle. Now, using a knife make a deep slit right in the centre, on the long side of the triangle. (do not cut through).

Now, mix all the veggies together and stuff into tofu. Serve it with chilli and tomato sauce. Or use the following home made chilli sauce

Homemade chilli sauce


6-12 fresh red chillies
5 shallots - sliced
5 garlic sliced
1 cm ginger sliced
1 tbs of vinegar (white) or lime juice
And water
A bit of salt
A bit of sugar


In a blender/processor, grind all the above ingredients together and set aside for the spices to blend together. Taste to your liking, like adding more lemon juice and sugar, if you like. The consistency of this sauce for tofu should be slightly watery.

Aarthii at times I make this broccoli carrot salad,


BROCCOLI CARROT SALAD

Steam broccoli, and carrots just right, so that it retains
its crunchiness. Add little capsicum squares.
Add thinly sliced onions, sprinkle little salt, and coarsely
ground fresh black pepper.
Drizzle 1 tsp of olive oil over it. also little lime juice.
Mix well and let it stand for an hour. Serve.

for vegetable poriyal u can use soya granules instead of grated coconut, just 2 tsp in enough. for that every time u no need to soak. better take 1/4 cup of soya granules and keep in a bowl. Boil water nicely and pour the water on soya granules with a pinch of salt. cover and keep it for 15 minutes, then squeeze the granules without water, wash it in cold water for 2 times , then it is ready to use. u can store this in a container, in the freezer. whenever u want u can use for the vegetable.

Selviem, u can use soya flakes in place of granules for poriyal... soaks quickly & looks similar to coconut...

U can also use soaked soya for kulambu,kurma varieties... cut coconut by half(or more if u wish to) & add soya instead...

Aarthii, another salad that I used to do when entertaining friends is.


Mixed salad:
Little pineapple chopped into bite pieces.
Little green apple chopped (soak in salt water first)
Little celery cut into pieces
Little carrot cut into pieces
Little cucumber also cut (remove the seeds)
Little tomato also cut (remove the seeds)
Sliced onions
fresh red chillies sliced
Lime juice
sugar
salt
pepper powder

Mix every thing and chill it first.
Serve it in a bed of lettuce.

VAALAKKAI PODIMAS (PLANTAIN)

Ingredients:

2-3 vaalakkai
1/2 tsp turmeric
4 green chillies chopped
1 big onion chopped
1 small piece of ginger minced
tsp urad dhall
tsp mustard seeds
1 sprig curry leaves
1 tsp lime juice or to taste
2 tsp oil
1 tbs coconut scrapings
salt to taste
chopped coriander for garnishing

Method:
Boil the vaalakkai cut into half with little turmeric and salt (only 3/4 boiled)
Peel the skin keep aside .Mash the vaalakkai with a potato masher roughly.
( Keep the skin, you make poriyal with that )
Heat oil in a wok, add the mustard seeds and urad dhall.
Now add the onions, ginger, and green chillies. Saute nicely.
Now add the turmeric powder, curry leaves and stir nicely.
Add the mashed vaalakkai and stir fry nicely. ( Non –stick pan is good)
Add in the coconut scrapings and fry nicely.
Taste for salt, add the lime juice, and remove.
Garnish with coriander leaves.

2 cups of the boiled vaalakkai skin. (cut into strips)
1 onion medium onion sliced
1green chillie sliced
1 dry red chillie sliced
little ginger minced
1 sprig of curry leaves.
2 tbs grated coconut
little cut coriander leaves

1/2 tsp mustard seeds
1/2 tsp urad dal
1 tsp oil
salt to taste.

Method:

Heat oil in a wok, add in the mustard seeds and urad dal seeds.
When they pop, add in the onions and saute well.
Now add in the sliced chillies, ginger and curry leaves.
stir well, add in the cut vaalakkai skin and stir well once.
add little salt if needed
Now add in the scrapped coconut, mix well and remove.
Garnish with the cut coriander and serve as side dish.

thanks a lot for ur comments. i will post the patties receipe at the earliest.
Coconut u can use for fresh coconut chutney, once in a while and for kurumas. for vegetable poriyal u can use soya granules. Initially some people may not like it, once u r used to this, (keeping in mind about health), u will enjoy the dish.
Also, one coconut can be used for 15 days , for a family of 4 members.

u r posting too much of receipes and making me crazy, i am totally confused what to make next. i am trying all the salads immediately. so my husband is very happy that he gets variety of salads both in afternoon and night. (i will not use dressing for the salads). We r enjoying the salads.
Valakai, i like very much, but we dont get indian valakai, near by my house. so waiting for the weekend so that i can buy and make the valakai skin poriyal. u r very clever, nice dish u made out of valakai skin. keep it up.

I relocated to Columbus , OHio from Virginia

Having a tough time to adjust here , no good transportation except the fact that I commute to office with the grace of single bus whose frequency is once is 1 hour .
As per job , there is a lot of confusion with the project due to high budget, we r working in reverting back the codes and stuff , and apparently i have no clue of the next project which they say that i will be shifted

Due to these various reasons I havent purchased anything in the house inclusive of internet connection , its in the office that I get a little time to check out our thread.
I know i am cribbing a lot :( which i dont like :|... just hoping there is some clarity in all the things happening around me .

Another of DEV'S Healthy Recipe.

Sprout moong kuzhambu... It's the same as we make usual curries... heat oil in a pan...add some dry chillies, baby onions(abt 8-10 cut into 2 pieces),channa dhal(optional) & fry a bit...then add cori seeds(3 sps),cumin seeds(1 -1 1/2 spns),a fewpepper corns(4-5) & fry until u get a nice aroma...then add a few tomato pieces(1/2 tomato or to taste) & soya flakes(or soya chunks cooked & grind a bit to make flakes) or coconut & fry for a min...grind this along with some curry leaves,tamarind,turmeric & salt... Add this to the sprouts(100 gms before sprouting) & cook until done...add water,salt & chilli powder as req... season with mustard seeds in 1/2 tsp coconut oil & garnish with cori leaves... The sprouts shouldn't become soft...meaning cook only until the sprouts are 1/2 to 3/4 done...depends on how U would like to have it...

U can make this curry thick or thin as u wish by varying the quantity of channa dhal & coconut/soya... This goes very well with dosa/idly & rice...

Measurement of ingrediens are to ur taste...can make it spicier by varying the measure of cori seeds,cumin & chillies...

slevika,today i made chappati as per ur recipe.That's too good.Within one - two chappatis itself we had the satisfication as like we had the whole full pledged meal.(i think this is due to the oats flour included)

[tscii]Friends I made this rajma pulao this sunday for lunch.
Every one enjoyed it in my house.



RAJMA PULAO

Ingredients:

½ cup rajma (red kidney beans)
1 cup basmathi rice
1 cup coconut milk
1 cup green capsicum cut into squares
1 onion chopped
2 tomatoes chopped
4 pips garlic chopped
1 small piece of ginger chopped
2 green chillies sliced
1 tsp red chillie powder
½ tsp cumin seeds
Salt to taste
2 tsp ghee or oil
Cut coriander leaves to garnish

Method:
Wash the rajma well and soak in clean water for about 6 hours.
Add salt to rajma and cook it in the water which you soaked it.
Once cooked drain the water in a container, keep the rajma aside.

Now wash the rice, add the 1 cup coconut milk, and 1 cup of the
water in which the rajma was boiled, add salt and cook it in a rice cooker.

Heat a wok with the ghee or oil, add in the cumin seeds,
Now add in the ginger and garlic, sauté well.
Now add the onions and fry well, add in the green chillies,
the tomatoes and fry well, add in the salt and chillie powder.
Stir till the tomatoes turn mushy. Heat until all the moisture is absorbed.
Add in the cut capsicum and the cooked rajma.
Stir nicely and remove. Add the cooked rice and gently mix every thing. Garnish with the coriander leaves and serve with onion raitha.

Note: you can add cauliflower or broccoli instead of capsicum.

kugan, oru doubt... everytime I cook rajma, I feel it's not cooked right... undercooked even if I soak overnight & cook for 6-7 whistles or even more... I have to put it in the cooker twice to get it cooked... ANY TIPS?..

Aarthi, this is my version of broad beans poriyal.

broad beans poriyal: (method 1)
===================

wash and cut broad beans - 1/4 kg
sambar onions - 3 , chopped
green chilly - 2 slit
red chilly - 1
yellow moong dhal - 2 tblsp soaked
salt - reqd
oil - 1 tsp
curry leaves - few
coconut - 2 tsp grated
or soya granules - 2 tsp
turmeric powder - 1/4 tsp
mustard seeds - 1/2 tsp
urad dhal - 1/2 tsp

Wash and cut broad beans according to our wish. cook moong dhal with little water, till it is half done.
Strain water in a container and keep aside.
Use the strain water to cook broad beans in microwave high for 2 minutes,(time may vary depends upon the quantity of the vegetable)
Now in a kadai, pour oil, mustard seeds, urad dhal let it pop up then add onion, chillies, curry leaves. Let the onions turns slight brown colour, then add moong dhal and the vegetable, mix thoroughly. Add reqd salt, turmeric powder, cover and cook for 3 minutes.
Now add either coconut or soya granules, mix properly let it cook for 2 minutes and remove.

Method 2:
=========

same as above, instead of moong dhal, we can use toor dhal.


Method 3:
========

same as above, no dhals .

Cook broad beans, with salt, chilly powder, turmeric powder in the microwave for 3 to 4 minutes.

in a kadai, do the same seasoning, add the vegetable and 1/2 tsp of saunf coarsely ground, mix thoroughly. finally add coconut or soya granules.

When u make sambar/kootu/more kulambu, u can prepare method 3.
when u make kara kulambu/vathal kulambu/puli kulambu u can prepare either method 1 or method 2

Same way u can prepare french beans, cabbage.

with cluster beans i make method 2 and method 3

Dev, I have no idea why your rajma does not get cooked.
I too usually soak it over night.

Six seven whistles, my rajma will go kola kola.
I normally after the 3 whistles, let it cool by itself.
Try soaking in hot water, also add little baking soda.
Try and see Dev.
Friends if any one has different ideas please post.

[tscii] Try this simple snake gourd raitha.


SNAKE GOURD RAITHA

Ingredients:

1 medium snake gourd
1 cup of thick curd more or less
1 medium onion sliced
2 green chillies sliced
1 sprig curry leaves
½ tsp cumin seeds
½ tsp mustard seeds
Little asafoetida
1 tsp oil
Salt to taste
Little coriander leaves

Method:
Clean the snake gourd and slice it.
Steam the snakegourd, remove when half cooked.
Beat the curds well add salt.
Add in the steamed snake gourds.
Heat oil in a pan, add in the cumin seeds and mustard seeds.
Add in the onions, curry leaves, asafetida and green chillies.
Sauté for a minute, pour over the curds.
Mix well , garnish with coriander leaves, serve with rice.


Note: some people like to add ground coconut to this raitha.

You will wonder what dessert to serve, when you have unexpected guests for lunch.
This dessert is very easy and simple to make
This simple dessert is even served in 5 star hotels here.


CARAMALISED BANANAS


Ingredients:
3 ripe bananas peel them
2 tbs brown sugar
Little lime juice
Little butter
Little pandan leaves sliced
Little water

Method:
Heat a non-stick pan, add in the sugar and make a caramel.
Once the caramel is done add in little water and the pandan leaves.
Add in also the bananas and let it boil for a minute on low flame.
Add in the butter stir slowly.
Add in the lime juice and remove.
Discard the pandan leaves.
Serve as a dessert with little of the syrup.

We do normal cooking like rice, vegetable one sambar or rasam for lunch and one kootu and chapati for B/F (or idli / dosai)
We really dont concentrate on protiens, minerals and carbohydrates etc. This this actually a trend in the family.

Romba choose panni, fat free-a, protien richa sila veedugalil pathu pathu seivaanga. i definitely dont fall under this category.

Protien rich-a pannnumna Adai + aviyal, kootu with lots of paruppu, variety of sundals ellam irukkave irukku.

peerkangai thogayal, i prepared today. my husband till last mouth of his he couldnot find it. morning only i told him find from what it was made. Finally, he told me to break the surprise. when i said, he was blinking like anything. Really it was great, my younger enjoyed with curd rice and he said with his little finger he showed yummy.

Kugan, maybe the quality of Rajma I get is poor...should try buying from some other store...I'll try warm water & soda tip in the meantime...

As for protein, grownups need protein only for maintance of the body... We can easily get it with 2 servings of dhal ... Most grains,milk pdts have some amt of protein in it... so we needn't worry much abt it...

Kids need more protein in the growingup age... so make sure u add dha & maybe lil soy product in their food everyday... milk , wholegrains(once or twice a day),nuts,mushrooms ellam serthukonga...adhu podhum... but if the teenagers are on a body building spree, they might want to try some protein drinks etc... otherwise if we follow a normal Indian diet, it shold take care of the nutrient req well...

& Kugan, I'm not a 100% vegetarian... I take meat once in a while...I took a break from non-veg for a while but not anymore... my parents are pure vegetarians & since I stay with them, I can't cook any non-veg at home...tht's the reason I always ask for veg versions...:)

Thank you very much Dev.
We have 5 school going children.
From the age of 5 to 14.
So I was a bit worried about their food.
Thats why I cook lot of tofu dishes.
No coffee or tea, only milk at times milo.
The children are angles, would not eat anything
out side. We pack food for their schools.
They love cakes and cookies.
Now I have to hunt for eggless recipes.

CRACKED WHEAT UPMA

Ingredients:
2 cups cracked wheat
1 cup any veges cut into small pieces
1 onion chopped fine
2 green chillies chopped
1 tsp ginger chopped
2 pips garlic crushed
1 sprig curry leaves
2 tsp oil
½ tsp mustard seeds
1 tsp urad dal
1 tbs channa dal
½ tsp cumin seeds
4 cups water
Salt to taste
1 tsp ghee

Method:
Heat a tsp of ghee and roast the cracked wheat till you get a good aroma.
( You can skip this step if you do not like) It will be extra yummy if you do.

Heat oil in a wok, add the mustard seeds, urad dal, channa dal,
and the cumin seeds. Add also the garlic and curry leaves.

After few seconds add in the ginger, green chillies, onion and sauté well.
Add in the cut veges and salt, mix nicely.
When the veges are half cooked pour in the 4 cups of water.

Let it come to a nice boil, lower the flame and add in the roasted cracked wheat slowly while stirring the dish continuously.
Make sure there are no lumps. Cover it with a lid and cook further
on a very low flame.

When all the water is absorbed, remove the lid and mix it gently.
You can serve it as it is or with any pickle.

This is quick one-pot meal and very healthy too.

same like ur broken wheat uppma, i also make. I used to prepare in the pressure pan. As u said it is healthy too.

Also we can prepare pongal with that. Fry broken wheat, with that (4:1 broken wheat:moong dhal) moong dhal , water and salt pressure cook and give tadka separately like pongal. This is different in taste and healthy too.

here is a healthy sweet dish'

red rice flakes - 2 cups clean it. donot wash
kerala banana - 1 , riped, chopped into cubes
jaggery - 4 tblsp
coconut - 4 grated
salt - a pinch
elachi powder - 1/4 tsp

mix all the ingredients and keep for 4 to 5 hours, then it is ready to eat.

I tried a variation to the usual fried rice by adding few drops of lemon grass oil & it turned out to be so flavourful... maybe I should try LG oil in place of LG for thai curries... :think:

A friend asked me as to why her upma is always very
kola-kola. She wants it to be uthir uthir.
I told her that we can make the upma in two consistency.
The very soft upma is normally served with kara chutney, or any hot chutney. I think it is also called bath.
The uthir uthir one is normally served with a sprinkling of sugar, banana or even with some gravy.
The trick in getting a good upma is to roast the rava with little ghee
until you get a very good aroma.

I am posting the two versions of the upma.


Rava Uppuma

Ingredients:

1 cup rava roasted nicely with little ghee
1/2 inch ginger chopped
1 onion chopped
3 green chillies chopped
Salt to taste
2 cups of water

To temper:
1 tsp mustard seeds
1 tsp urad dal
1 tsp channa dal
1 sprig curry leaves
2 tbs ghee or oil
Lemon juice to taste optional

Method:
Heat a wok with ghee or oil. Add in the mustard seeds
Urad dal, channa dal, and curry leaves.
Saut nicely. Now add in the onions , ginger and green chillies.
Stir nicely , when the onions are a little brown add in 2 cups
Of water and salt. Let the mixture boil.
When it boils, slow the fire and add the rava little by little
Stirring all the time. See that no lumps are formed.
Stir nicely and see that the rava is cooked.
Remove from stove, sprinkle little lime juice if you like.
Serve with kara chutney

NOTE: If you want uthir- uthir uppuma, use only 1 cup of water for1 cup of rava As soon as you mix everything, keep the flame very very small.
Cover the wok and let it cook in its steam for a while. Then remove
The cover and break up the lumps nicely. They will be uthir uthir.

Another way is to add chopped carrot, capsicum, green peas and any
Vege of your choice to make vegetable uppuma. You can garnish with coriander leaves.

LEMON RICE NOODLES

Ingredients:

2 cups dry rice noodles or freshly made iddiappams (string hoppers)
cup frozen green peas
cup grated carrot
1 tbs peanuts
1 tbs chana dal
2 green chillies finely chopped
1 sprig curry leaves
tsp mustard seeds
tsp tumeric powder
1 tbs lemon juice
1 tbs oil
A pinch of asafetida
Salt to taste

Method:

Take enough water in a pot, add salt and boil.
When it begins to boil, add the rice noodles.
Turn the heat off. Keep it covered for 10 minutes.
Drain and keep aside. Let it cool. Skip this step if using iddiappams.



Heat oil in a wok, add the mustard seeds, chana dal,
And peanuts. When they turn lightly brown, add
The green chillies, asafoetida powder, curry leaves
And peas. Saute for a few minutes.
Add the rice noodles. Mix well.
Turn the heat off. Add the carrot and enough lime juice.
Stir nicely, check for seasoning. Serve hot

Another of DEV'S healthy recipe.



Mushroom curry.

Ingredients
10 large button mushrooms, each cut into 4
1 teaspoon ginger-garlic paste
2 tablespoons onion paste
1 teaspoon tomato puree
1/4 teaspoon chilli powder
3 tablespoons curds
1/4 teaspoon garam masala
1 tablespoon oil
Salt to taste
For garnish
2 tablespoons chopped coriander

Method
1. Heat the oil in a pan, add the ginger-garlic paste and the onion paste and saute for some time.
2. Add the tomato puree and chilli powder and stir for some time.
3. Add the mushrooms and saute till they are tender.
4. Finally, add the curd, garam masala and salt. Mix well.
5. Garnish with coriander and serve hot with chapathi

Instead of onion paste,tomato paste & gin-gar paste i chopped everything & sauted onion,gin ,gar in 1 tsp oil...& then added tomatoes..cooked for a min...took off the flame & let cool...& the ground it with chilli powder & added back to the pan & let boil for a while with little water & proceeded as given in the recipe. This way we can reduce the consumption of oil.Remember not to cook for a long time afer adding the curd...just mix it & take off flame...
