Selvika,as u have stated in the recipe,i made kara chutney.
We had it with kara chutney only.This chutney really matches the aadai.Nice recipe selvika.

One more thing selvika,tried ur onion theeyal for today's lunch.It came out very well.Thanks for the recipe selvika.

Thats good dev, Kutti is getting much better.

Actually once if the cold has come,definitely it will take a week to go.That too for kids,paduthi eduthudum.Take care of her.

Today I chanced upon fresh kaatu kothamalli... appapa...enna oru manam...:) made chutney with it...

Here's mom's coriander chutney recipe.This chutney will be sweetish due to the addition of sugar. Sugar is to mask the bitterness of cori.

1 bunch coriander leaves with stem- chopped roughly...

2 green chillies -slit & saute in oil till whitish

a handful of urad dhal -stir fry in oil until slightly brown. Add asafoetida to it before taking off fire.

karumbu sakkarai- a tblsp or more-this chutney will be sweetish. so add to ur liking

gooseberry sized tamarind.

Saute the cori & tamarind in a tsp oil until the cori is wilted & starts to turn slightly brownish.

Take all in a mixie cup. Add salt & grind adding minimal water to a rough paste. This goes well with rice & can be stored in fridge for 3-4 days. If using with idli/dosai, add more water & grind to a slightly smooth paste.

Dev, you can use fresh firm mango cubes,
instead of the pineapple cubes.
Try it will be very colourful and tasty.
I usually prepare this dish when I am having,
guests for lunch.

Thanks for trying the drumstick leaves rasam.

Dev, when my little one has cold, I will take 1/2 a vethilai,
little tulasi, and few karpuravalli leaves.
just warm them in a chatty, squeeze out the juice.
Once in the morning and once in the evening.
Paranthu pooiudum the cold.
Rub little vicks in the chest and back, before she goes to sleep.

Since now I am hunting for eggless cakes I tried hers.
It was a bit dense, I used milk in stead of water.

SUPERSPICY'S CAKE
Eggless Chocolate Cake

Ingredients:

1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar
Method:

Preheat oven to 375°F.Spray a small baking pan (8×12) with vegetable spray or Baker’s Joy.Combine dry ingredients directly in the pan. Mix all the wet ingredients. In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.

Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.

Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

Dev, if your daughter is only 15 months.,
take 2 to 3 tulasi leaves, 1/2 a karparavalli leave,
warm it and squeeze the juice.
take 1/2 tsp of the juice, mix with warm honey and feed her.
I used to do that for my Aishu.
The salli will come out with her motion.
You can warm the vethillai rubbed with oil
Then put it on her chest and back. Thats also good.

Please only do it if you are happy.
Ask your mother for advice.

THENGAVADA

This is a Kerala item similar to our South Indian tattai.
The pepper in this dish gives it the umph.
Goes well with hot tea.

Ingredients:
3 cups rice flour
1 cup roasted urad dal flour
1/2 cup fresh coconut
tsp tumeric powder
1 tbs crushed pepper corns
1 tbs ghee
Salt to taste
Oil for frying

Method:
Mix all the ingredients except the oil.
Add enough warm water and knead to a soft dough.
Spread a clean cheesecloth, or white cloth on the table.
Break off pieces of the dough and roll them into small
Lime sized balls. Place the ballon the cloth and flatten
Each ball into a disk. The cloth will absorb some of the
Water from the dough and make it easier to fry.
Heat oil in a wok, deep fry the disk to a golden colour.
Remove and store in a tin after cooling.

thanks a lot for ur words. i am trying ur receipes whatever suits my family. my kids enjoys the dish. whenever i try ur receipes or from the thread, my husband says this is malaysian dish.
Thanks for giving so many receipes. thengavada is like very much, my grandma used to prepare this. It is very tasty. nowadays, who is making all these dishes. it is difficult to press. for that my mom use chapathi presser.

kugan i made coffee cake 2 times at home. yesterday i made by night everything is finished, so i made again today. We r enjoying like anything. that much tasty. My son had a picnic today, so he packed for his friends. I told them choclate cake, so it vanished very fast.

sorry to hear that ur kutty is struggling with cold. Donot worry. u can give vertilai saru, tulasi saru, omavalli elai saru. any of this, just grind and filter the juice. just lukewarm and add of pinch of salt. all the flum will come out by vomitting or by potty. Since the climate is cold, u can give this everyweek. Coz of this she will be relieved from cold and she will get appetite.
Actually we start from 30 days of child birth, Now my kids are 8 1/2 and 6 1/2. everyweek i give them kashayam.
so we can prevent them from severe cold , fever etc. once the whole body system is clear, there is no chance of getting cold.

u try this. one or two times it will be difficult, after that they get use to this.

I love whatever that is sweet and sour. A recipe given by my friend.

This is one of my favourite dish.

SWEET MANGO CURRY

400 grms of raw green mango cubed with skin on.
2 big onions finely chopped
2 big tomatoes finely chopped
2 tbs oil
10 garlic pips crushed
1 tbs chillie powder
1 tsp mustard seeds
tsp fenugreek seeds
tsp cumin seeds
tsp tumeric powder
Salt to taste
Sugar to taste
Water

Method:

Heat oil in a wok, add in the mustard seeds, cumin, and fenugreek.
Now add the crushed garlic and fry, add the chopped onions, saut e well.
Add the chillie powder, tumeric powder and salt. Stir for a minute.
Add in the chopped tomatoes and cook for 5 minutes.
Add in the mango pieces and stir well.
Add enough water for the mangoes to be cooked.
Add in the sugar and cook on low flame till you get the curry consistency. Remove and serve with roti or rice.

Children will love this pancake.

BANANA PANCAKES

Ingredients:
1 cup long grain rice soaked for 3 hours
5 ripe bananas
1/2 a cup brown sugar
1/2 cup ghee.

Method:
Grind the rice with the bananas, and brown sugar.
The batter should have the consistency of pancake batter.

Heat a griddle, smear the griddle with tsp of ghee.
Pour a ladleful of batter evenly to form a thick pancake.
Pour a little ghee around the edges.
Cook for a minute or two. When the pancake is cooked
Use a spatula and turn over the pancake. Cook for another minute.
Remove from the griddle and repeat with remaining batter.
For breakfast serve them with honey or maple syrup.


Note: you can even use whole wheat flour instead of rice.

Potato Kuruma

Required Items:

Potatoes - 3 to 4
Tomato - 2
Onion - 1 Big
Chilli powder - 1 to 1 1/2 tsp
Coriander powder - 1/2 tsp
Tamarind juice : 1 to 2 tbsp

For Grinding :

Garlic - 5 gloves
Ginger - 1/2 inch
Coconut - 1/2 cup
Fennel seeds - 1 tbsp

For Seasoning :

Cinnamon sticks (pattai) - 2 inch
Oil - 3 tsp
Curry leaves

Method:

Chop the onion into fine thin strips
Chop the Tomato into small pieces.
Peel the outer skin of the potatoes.
Chop the potatoes into medium sized pieces and pressure it for 1 whistle. It has to be boiled well. But the shape should be retained.
Grind Garlic, Ginger, Fennel seeds & coconut into a fine paste.
In a pan, pour the oil and add the cinnamon sticks and fry for few seconds.
Now add the finely sliced onions and fry it until it is translucent.
Now add the tomato pieces and fry for about 1 to 2 minutes..
Add the coconut paste now and allow it to boil in a low flame.
After 1 minute add the boiled potato pieces and mix well.
Now pour 1 1/2 cups of water and add Chilli powder, coriander powder and salt.
After mixing everything well, close the pan with a lid and let it cook for about 5 minutes.
Now open the lid and add the tamarind juice mix it well and allow it to boil for 2-3 minutes.

This kuruma has a nice taste.As well it has a nice aroma also.


Goes well with Chappati,Aappam & Poori



Aarthii here is your potato Kurma.
I made simple ghee rice to go with it.

Try this simple patchadi


BESAN CURD BRINJALS

Ingredients:

300 grms long brinjals cut into cubes
Salt to taste
Little tumeric powder

1 cup fresh curds well beaten
1 tbs besan flour
Little tumeric powder
1 sprig curry leaves
½ tsp mustard seeds
2 dry red chillies cut into pieces
Salt to taste
Oil

Method:
Mix the salt and tumeric powder to the cut brinjals.
Heat enough oil and fry the brinjals. Keep aside.

Mix the curds with little water , besan flour, salt and tumeric powder.
Heat about 1 tbs of oil in a wok, add in the mustard seeds,
curry leaves and dry red chillies. Sauté well.
Now add the curd mixture and cook on a low flame, till it comes
to a boil. Keep stirring it will become a bit thick.
Add the fried brinjals give a good stir and remove.

When cool keep in the fridge. This is normally served cold.
Serve as a side dish with rice.

I have one side dip for both of urs puliodarai recipe.Plz do give a try once wen u make pulisadam for the next time.


Porikadalai Thuvaiyal

Required Items:

Porikadalai(pottu kadalai) : 1 handful
Garlic: 2pips
Green chillie: 2 to 3
Salt

Method:

Put all above mentioned items in small mixer jar.
Make it into a fine powder without adding any water
once wen it is done, now change the powder into sauce bowl.
Now u can taste for salt and spice
Sprinkle little water once or twice and try to form a round shape (As like how u will make chapatti dough)
Now the thuvaiyal is ready.

Note: Since we are powdering it without adding any water. The taste of the thuvaiyal will be exactly the same as like the thuvayal grinded in our tradional Ammi kal.

It goes well with puliyodarai.My mom used to make this for puliyodarai(puliyogra,puli sadam)

U can have this for curd rice also as side dip. It suits well for that also.
Normally in our side in order to break the fasting, people used to make raw rice pongal and this thuvaiyal

Made moong sprouts pulav today... nalla vanthichu... here's how I made it...

1/2 cup green moong dhal sprouts...Add more or less to ur taste

1 cup rice- I used normal rice soaked for 15 mins. Basmathi rice will taste better I believe

Grind: 3 big garlic pods, 1 inch ginger,5-6 pearl onions,a handful of mint leaves, 4 green chillies, 1 heaped tsp sombu, 2 inch pattai, 2 cardamom to a rough paste. Do not add water for grinding.

Heat 2 tbsp oil. Add 1 clove & a bay leaf & let it become flavourful.

Add & saute 1 onion sliced until it turns brownish.

Add the ground paste, 1/4 tsp chilly pwd & saute for 2-3 mins until it becomes flavourful & slightly brownish.

.Add one chopped tomato & saute till pulpy.Add turmeric pwd now but it's optional.

Add the above mixture to the rice + 2 1/2 cups water(less if using basmathi rice) & salt and let it start boiling.

once half done add the sprouts & cook for 2-3 whistles.

Once the steam is released, add a tbsp of ghee & mix well.

Note: to make sprouts, soak dhal overnight. drain the water & keep the dhal in a hot pack. Towards evening wash & drain the dhal & keep it in the hot pack again overnight. U should have good long sprouts by morning. If not, wash & drain again & leave it till evening in the hot pack.

Very famous in Kerala.

IDICHU PIZINJA PAYASAM

Ingredients:
1 cup long rice
4 tbs ghee
1/3 cup roasted moong dal
3 cups brown sugar more or less to taste
6 cups coconut milk from 1 coconut
1/4 cup coconut thinly sliced
tsp cardamom powder
A pinch of salt
Little honey and little ghee.

Method:
In a heavy pot add the rice, salt and moong dal with about 2 cups of
Water and boil. Cook the rice and dal until its soft to the touch.
Most of the water should have evaporated by now.
Stir in the brown sugar and 2 tbs of ghee and cook for another
15 minutes over medium heat stirring continually.
Pour in the coconut milk and reduce heat.
Avoid boiling, simmer for about 20 minutes, while stirring.
Remove from stove. Fry the coconut pieces in the remaining ghee
And add to the payasam.
Sprinkle it with cardamom powder and stir gently.
This payasam is usually served with a spoonful each of honey
And ghee on top.

Still hot so I cannot slice it yet.

VEGETARIAN FRUIT CAKE

Ingredients:

230 grms of self raising flour
A pinch of mixed spice powder
200 grms of brown sugar
230 grms of butter
1 tin of Ideal milk (evaporated milk)
300 grms mixed fruits ( chop up the fruits)
20 grms almond silvers to garnish

Method:
In a pan add the sugar, milk , butter and the mixed fruits.
Cook on low fire till the sugar and butter melts.
Let it boil slowly once and off the flame.
Let the mixture cool by itself.

Once cooled add in the sieved self raising flour with the mixed spice powder.
Mix the flour well into the butter mixture.
Grease and line the bottom of a loaf pan with
parchment paper.

Pour the mixture into the pan. Garnish with the almond silvers. Pre heat the oven to 175 degrees C
Bake for about 1 hour or until a toothpick inserted
comes out clean.
Allow to cool on a rack. Once it is cool , you can cut into neat slices.

Selviem most of my Kerala recipes are from my beloved
Ammini akka. I modify little to suit us.
They use a lot of coconut there.
Another jackfruit payasam is waiting.
You know every Ammavasai, we have banana leaf lunch.
Payasam and vadai are a must.
So I make different type of payasam every month.

As for the fruits Selviem, they come ready made in a box.
Or you can add any fruits of your choice for the weight.
Raisins, currants, sultanas, preserved cheery, caramalized orange peel, chopped almonds, prunes and so on.


Selviem I have a very good recipe for a nice fruit cake where eggs and brandy are used. You have to soak the fruits over night.
You have to bake the cake and keep for a week, adding little brandy over the cake. The cake improves in taste as you keep it longer covered with aluminium foil. I will post it if you want.
I do not bake this cake anymore because of the eggs and brandy.

Here is the apple jam recipe.


APPLE JAM

Ingredients:
2 kg of mixed red and green apples
¾ cup of sugar for every cup of juice.
11/2 tsp of lemon juice
3 cups of water

Method;
Chop up the apples unpeeled including the cores.
Add the water and cook on low fire until the apples
are cooked well.
Use a potato masher to mash up the apple pieces
Then press fruit softly through a sieve or colander.

Measure the juice and pour it into a pan.
Add ¾ cup of sugar for each cup of juice.
Add in the lemon juice. Bring to a boil.
Stir until the sugar is dissolved.
Boil over high heat stirring frequently until the gelling point is reached.

Slow the flame, pour a small amount of boiling jam on a cold plate.
Put it in the freezing compartment of the fridge for few minutes.
If the jam gels, its thick enough.
Cool and store it in glass jars.


Note you can add 1/2 a tsp of gelatine if your jam does not gel well.

A simple Malaysian dessert.
Very easy to make and tasty.


KUIH LAPIS (LAYERED CAKE)

INGREDIENTS:

300 grms rice soaked and ground finely ( thick)
50 grms cornflour
360 grms sugar
4 cups coconut milk from 1 coconut
a pinch of salt
red colouring
a little rose essence

METHOD:

Into a bowl add all the things except the red colouring and essence.
Stir until the sugar is dissolves.
Add the essence.
Divide into two portions.
Leave one portion uncloured.
Add red colour to a light pink in the other portion.

Place a round 21 cm greased cake tin in a steamer tray.
Pour 2 round laddle full of un coloured batter into tray. ( the batter must cover the tray)
Cover and steam over rapid boiling water for 2 minutes until cooked.
Pour in 2 round laddle full of pink coloured batter into tray.
Repeat procedure alternating uncoloured and coloured layers
Until batter is used up. The last layer should be red.
The last layer add a bit more red to make it dark red in colour.

Remove from steamer and allow to cool. Really cold.
When cold cut into diamond-shaped pieces.
Use a knife dipped in ice water to cut neat slices.

for the sprouts kulambu, if u don't have kulambu milagai thool u can add sambar pwd or kongu pwd plus a big pinch of garam masala...but the taste will be lil diff... Or just follow Mrs.mano recipe as such...she doesn't add any masala... just some fresh spices...

thanks for the receipes. jackfruit payasam is very tasty. i have a friend she makes all typical kerala dishes. i have tasted all the dishes. as u said they use too much of coconut and coconut oil. coz of that flavour and taste is too good.

yesterday my friend made ur coffee cake for her wedding anniversary. it came out very nicely. she conveyed a big thanks for u.

malaysian dessert looks very interesting and the picture is very colourful. i will try for the new year party.

I am happy that you liked the soup.
Dev, normally we use few green apples, because
we have natural pectin more in the green apples.
other wise you have to buy pectin powder and use about
1 tsp for the jam to set or to thicken.

you can try with red apples, but add in 1 tsp of dissolved geletin
into the jam to help to set.

We have lot of nice local desserts here.
Most of them use the sticky rice or its flour.
Do you get the sticky rice in your place.?
We call it pulut. Thais use a lot of this rice.

Suvai nga thirsty yaai irunthaal itho oru kheer unggalukku.
I was able to get only half a glass to take a picture.
Ellameh vanished in a moment. Hot season has started.


Badam Kheer.

1 cup almonds soaked for about 1/2 an hour.
6 cups milk
1 cup sugar
1/2 tsp cardamom powder
pinch of saffron
chopped pistachios for garnishing.

Method:
Remove the brown skin of the almonds.
Use little milk and grind it to a little coarse paste.
Then boil the remainder milk.
Add the almond paste, sugar and safforn
and boil for about 15 minutes, till the raw smell goes.
Add in the cardamom powder. Remove and chill.
Serve with the chopped pistachios.

Dev, thats called a layer cake or Indonesian layer cake.
For about 60 grms of flour you have to use about 20 egg yolks.
It will have a strong egg smell.

I made it once to learn how to make it.
Now no, no because of the eggs.

The hot season has started in our country.
Its so hot nowadays.
I usually like to make this kali during this time.

I can see NOV anneh twitching his face on seeing this recipe. :lol:


RAGI (KEZHVARAGU ) KALI

Ingredients:

1 cup of ragi flour
2 tbs of rice
tsp salt
4 cups of water
1 tsp ghee (optional)

Method:
In a pot add the rice, water and salt and cook till
The rice is soft.
Then add the ragi flour as a heap and cover with a lid.
Let it cook for about 5 minutes on low heat.
Remove the cover and using a whisk or a wooden spoon
Stir the ragi mixture vigorously until you see no lumps.
Add in the ghee if you are using.
Cover and let it cook for about 15 minutes.
The kali should not stick to your fingers when you touch it with wet
fingers, that means it is cooked.
Stir nicely and off the stove.
When it is bearable hot, wet your hands and shape them
nto balls . Wet a container and put them in.
Serve with puli kulambu .

Note: Normally the remainder kali balls are put in a
Container with water in the fridge. It will be used to
Make ragi koozh the next day. A refreshing drink for
A hot day.

KEZHVARAGU KOOZH

Ingredients:

1 ragi kali ball soaked in water overnight
1 cup of yogurt
Salt to taste
Water

Method:
Take the ragi ball in a container.
Add enough yogurt , water and salt.

This is a very famous jam in Malaysia.
Its made of thick coconut milk, eggs and sugar.
Its used on toasts, filling in buns, steamed pau
and even on steamed sticky rice.
Those who are non-vegetarians can try it out.

KAYA ( COCONUT JAM )

Ingredients:
1 cup pure coconut milk from 2-3 coconuts
2 cups castor sugar
1 cup eggs lightly beaten
1 pandan leaf.


Method:

In a mixing bowl stir the lightly beaten eggs, the sugar and the coconut milk.Mix thoroughly and pour into an ovenproof dish.

Add the knotted pandan leaf.

Cover with a double thickness of greaseproof paper, and the lid.

Steam the dish for about 2 hours.

Every 1/2 an hour stir the jam.

When it has thickened, remove and let it cool.

Remove the pandan leaf.

Put it in a jar and store it in the fridge.

MIXED VEGE WITH CHICKEN

Ingredients:

200 grms chicken meat cut into cubes.
200 grms squids cut into rounds or fresh prawns.
100 grms long beans cut into1 inch
100 grms carrots cut into strips
00 grms cauliflower cut into florets.
1 big onion sliced
1 tbs chillie paste or more
1 tsp ginger paste
1 tsp garlic paste
1 tsp vinegar
1 tsp thick soya sauce
1 sprig curry leaves
a pinch of sugar
2 tbs oil
salt to taste
coriander leaves for garnishing.



Method:
Put a wok on fire. Add the oil.Now add the onion and saute well.
Add the curry leaves, ginger and garlic paste.
Fry nicely. Add in the chillie paste, and fry till the
Raw smell goes. Add in the chicken, squids and vegetables,
And give a good stir.
Add in cup of water, salt, sugar, vinegar, and soya sauce.
Stir fry, cook till the veges and meat are cooked.
This is a semi dry dish. Remove and garnish with coriander leaves.

Selviem I am posting few non vege recipes for you.


TALCHA
Ingredients

kg mutton with bones ( chest bones )
1 cup toor dhal
coconut scraped
1 brinjal
1 potato
2 tomatoes
1 small lime sized tamarind
1 big onion
1 tbs meat curry powder
tsp tumeric powder
2 tsp garlic paste
2 tsp ginger paste
2 green chillies slit
1 stalk curry leaves
1 stalk coriander leaves chopped
2 one inch cinnamon sticks
2 star anise
4 cloves
4 cardamons
tsp aniseed
2 tbs oil or more
salt to taste

Method
Clean the dhal and the mutton, add tumeric powder and cook till the dhal and mutton are cooked..The dhal must be really mashed.( or you can cook separately and mix )
Have enough gravy after boiling the mutton and dhal.
Extract the tamarind juice about a cup
Extract 1st and 2nd milk 1 cup each.
Cut the brinjal and tomatoes.
Cut the potato into big cubes.
Slice the onion.
Heat the oil in a pot..
Add in the cinnamon, cloves, star anise, cardamoms, and the aniseed. When they splutter, add in the sliced onion, and the slit chillies. Fry till the onion turns limp.
Add in the brinjal, tomatoes, potato and curry leaves, and stir for a second.
Now add the second coconut milk, mixed with the meat curry powder, add also the tamarind juice, stir nicely.Let it boil, Now add the mutton dhal mixture, and give it a good stir and let it boil till the vegetables are cooked.Add salt to taste..
( The talcha curry should be a bit watery, not very thick, so add in water, or more coconut 2 nd milk if your curry is thick. )
When the vegetables are cooked, add in the first coconut milk, and boil for a minute.
Sprinkle the coriander leaves and remove from the stove.

Drumstick leaves Curry :: Murungai keerai kulambu

Heat a tsp oil. Add a heaped tbsp of toor dhal & 4-5 red chillies. Once the dhal starts becoming golden add 1 tbsp cori. seeds 1 tsp jeera & 1/4 tsp peppercorns. Fry till flavourful. Switch off flame & add a big pinch of asafoetida & 1/3rd coconut grated,1/4 tsp turmeric pwd, req salt. Mix well & once cool, hgrind it to a smooth paste.

Roughly crush 15-20 pearl onions & 2 garlic pods & add to the ground mixture.

Heat 1/2 tsp oil. Splutter mustard & 2 dry chillies.

Add the ground mixture , a big bowl of cleaned drumstick leaves & 1/2 ltr water(qty here is approximate. Use your judgement). Let it come to a boil. Check for taste & add more salt,chilly pwd if req.

Let boil for 3 mins until the raw flavour of masalas are gone & the curry becomes flavourful. Don't let it boil for too long. just around 3-4 mins would do. Done. This curry should be watery. Just a tad thicker than paruppu rasam is what we r looking for.

Serve with rice.:slurp:

Dev, if you would like to try the egg jam,
with all the ingredients add another cup
of coconut milk. put everything in a wok.
On low flame keep on stirring till the liquid
becomes thick like jam. It will take about 20
minutes or so. Try and see.

When you have left overs you immerse the
balls in water and keep over night.

CHICKEN RASAM

Ingredients:
1 kg chicken bones, legs,neck,breast bones
you can buy it in the market
3 tbs coriander seeds
1 tbs pepper seeds
1 tsp cumin seeds
1 tsp fennel seeds
1 tsp poppy seeds or kas-kas
2 pieces cloves
1 inch cinnamon stick
2 dry red chillies
tsp tumeric powder
2 sprigs curry leaves
8 small onions
salt to taste
2 tbs or more sesame oil (nallanai )

Method:
Pour 1 tbs of oil and roast all the ingredients
Except the small onions and tumeric powder
Remove everything. Now pour a little oil
And saut the small onions.
Let everything cool. Then grind all the ingridents in a mixie
Leave out the onions first.
Add little water to make a fine paste.
Now add the onions and grind roughly.
In a deep pot add oil and fry the chicken bones with tumeric powder
Till the raw small goes. Add the paste and mix nicely.
Now add 6 cups of water and boil well. Add salt.
Or you can pressure cook for 2 whistles.
Strain the rasam and drink it piping hot.
You can really work out a good sweat.
Good for flu and chest colds
You can also eat it with steaming soft rice.

CHILLIE PRAWNS
Ingredients:
1 onion finely sliced
1 tbs ginger finely chopped
1 tbs tomato paste
1 tbs light soy sauce
1 tbs lime juice
tsp tumeric powder
tsp chillie powder
1 tbs crushed chillie flakes
3 tbs cooking oil
Salt to taste
10 large prawns, cleaned and deviened.
Little chopped spring onion leaves for garnishing

Method:
Marinate the prawns with tumeric powder,
Chillie powder and lime juice for about half an hour.
Fry in little oil, till crisp on both sides. Set aside.
Heat the remaining oil in a wok.
Add the ginger and onions. Saute for few minutes
Till the onions are limp.
Add tomato paste, soy sauce and chillie flake
And stir fry for a minute till oil seperates.
Add the prawns and about 3 tbs of water.
Fry for few minutes blending spices well.
Taste for salt and remove.
Garnish with chopped spring onion and a slice of lime.

in trichy we get plain watery kuruma for parotta, that is very tasty. i dont think we can find chicken pieces in that. anyway u post ur version, let me try out that.

no tomoatoes..no puli... senju paarunga...also for this kulambu u add the onions raw(no stir frying in oil) & we use thuvar dhal for the masala... so konjam diff-a irukkum... For added taste & flavour, add coconut oil once u take the curry off the flame...

Selvika,i have one method of making this salna for parottas.
I learned this frm my SIL.am posting it for u.Give a try and see.

I dunno whether it will have the same taste like what u had outside.But i can tell u onething, that this salna also has a different taste.

Required Items:
Onion: 2 big
Tomato: 1 to 2(based on its ripeness)
Ginger garlic paste: 1 to 1½ tsp
Chilly Powder: 1 to 2tsp
Salt

For Grinding:
Coconut threads: 3 to 4tbs
Kasakasa : 1 tsp

For Seasoning:
Pattai : 1 inch stick
Sombu : ½ tsp
Caradamon : 1
Cloves : 1

Method:

Take the required kasakasa in a small bowl and pour some hot water into it. Keep it aside for some 5 to 10 mns
Chop the onion into fine slices
Chop the tomato into small pieces
After some 10 mns, grind the coconut as well as the kasakasa together into a fine paste.
Now in a pan ,pour oil and add the seasonings.
Once wen it got splutter, add the ginger garlic paste and fry it nicely.(Take care well, it might get burnt soon)
Now add the chilly powder .Fry for a few seconds.
Now add the onions and fry it nicely till it reaches golden brown
Now add the finely chopped tomatoes and fry it.
Fry till it becomes mushy.
Now add the grinded paste along with salt. Mix it well.
Pour some 1 to 1½ cup of water and once again mix it well .close the lid for a few minutes.
Once when it is boiled well, chk for the constituency of the gravy. (U can add some more water if needed)(Without adding water even u can allow the gravy to become some more thicker also)
Tatse for salt and switch off the stove.


I have tried myself this salna twice with parottas.It came out well.Hope u will also like it.

It suits with chappati also.

CHICKEN SALNA

Ingredients:

300 grms small pieces of chicken with bones.
Apply little tumeric powder and keep aside.

To Grind:
4 green chillies
1 tsp cumin seeds
2 tbs roasted groundnuts
3 tbs scrapped coconut
1 inch cinnamon stick
3 cloves
3 cardamoms

1 tbs ginger paste
1 tbs garlic paste

1 tsp chilli powder
2 tsp coriander powder
2 medium onions chopped fine
2 tomatoes chopped fine
2 potatoes cut into medium pieces
1 sprig of curry leaves
2 tbs mint leaves
2 tbs coriander leaves
2 bay leaves
1 tsp aniseeds
2 tbs oil
Salt to taste
3 green chillies slit


2 tsp besan powder + 3 tbs sour curds

Method:

Heat a pot with the oil, add in the aniseeds and bay leaves.
Let it splutter, add in the chopped onions
Sauté for a minute, add in the curry leaves, mint and coriander leaves.
Add in the ginger and garlic pastes,
Stir well add in the tomatoes and cook till turns mushy.
Add in the chicken, chillie powder, coriander powder,
salt and potatoes. Mix nicely. Add in 2 cups of water.
Cook for about 10 to 15 minutes .

Now add another 2 cups of water to the ground masala .
Add it to cooked chicken. Let it come to a boil.

Mix 1 cup of water to the curds and besan flour.
Pour the mixture into the boiling gravy.
Cook for another 20 t0 30 minutes, on low heat.
Stir slowly once in a way.
The gravy should be thin, taste for salt.
Add in the slit green chillies and remove.
Keep closed for a while for the green chilies
to release the aroma. Enjoy with parotta.

VEGETARIAN SALNA FOR PAROTTA

Ingredients:

1 tsp ginger paste
1 tsp garlic paste
2 onions sliced
2 tomatoes chopped
3 green chillies sliced

½ tsp cumin powder
½ tsp gram masala powder
10 mint leaves

3 cloves
2 bay leaves
1 sprig curry leaves
2 tbs oil

To Garnish:
10 mint leaves
2 tbs coriander leaves
2 green chillies slit into 4 and c cut across.

Method:

Heat a pot with the oil, add in the seasonings.
Let them splutter, add in the sliced onions.
Sauté well till they turn slightly brown.
Add in ginger garlic paste, green chillies, mint and coriander leaves.

Stir nicely add in the chopped tomatoes, and all the dry spice powders.
Mix nicely and let the tomatoes become mushy.
Add in 3 cups of water along with the ground ingredients.
Let the gravy come to a slow boil and the raw smell is no more.
Add in the smooth sour curds. Mix well.
Remove and garnish with the mint, coriander and green chillies.
Close the pot for few minutes. Serve with parotta.

Note: The gravy should be watery, add more or less water
according to your judgement.

BANANA STEM KUTOO

Ingredients:
2 cups of chopped banana stem
½ cup toor dal
1 small tomato chopped
2 slit green chillies
Little tumeric powder
Salt as needed

To Grind:
3 tsp scrapped coconut
1 tsp cumin seeds
1 green chillie

To Season:
1 tsp oil
½ tsp mustard seeds
½ tsp urad dal
1 dry red chillie broken
1 sprig curry leaves.

Method:
Take watery butter milk in a container.
Apply oil to your palms.
Cut the banana stem in round slices.
Remove gently the fibre sticking to the slices.
Then cut it into small pieces and immediately put them
in the butter milk.

In a pressure cooker add the dal, tumeric powder, tomato and the 2 green chillies, cook for 1 whistle.
After the pressure subsides, remove the lid, add in the squeezed
banana stem pieces. Let it cook on a medium flame so that most of
the water evaporates.

Now add in the ground paste and salt to the dal mixture.
Cook on low heat till the kutoo is dry as required.
In a separate pan add the oil and add the seasoning ingredients.
When the mustard splutters remove from heat and add the seasonings
To the banana stem mixture. Stir nicely.
Remove and serve with rice.

TAPIOCA WITH COCONUT

Ingredients:
300 grms of tapioca cut into cubes.
Salt to taste
1 sprig curry leaves
1 tsp coconut oil

To Grind:
½ cup scrapped coconut
4 green chillies
3 garlic pips
¼ tsp cumin seeds
3 small shallots
Little tumeric powder
Grind all the ingredients to a coarse paste

Method:
Put the tapioca pieces with enough salt and water in a pot.
Cook till the tapioca is well cooked but not mushy.
Strain all the water.
In the pot now add in the ground paste, and curry leaves.
Cook it on a very slow flame for about 10 minutes.
Stir often while cooking.
Remove, add the coconut oil, stir and serve.

STEAMED RIPE PLANTAINS

Ingredients:
4 ripe plaintains
1 ½ tbs ghee
½ cup brown sugar

Method:
Wash the plantains and trim off their ends.
Cut them into two- inch long pieces with skin intact.
Heat water in a steamer, place the plantains standing on end
in the steamer insert.
Dot the tops of the pieces with ghee and sprinkle them with
the brown sugar.
Cover and steam until the fruit is cooked through, about 10 minutes.
As they are steamed, the plantains will absorb the melted brown
sugar and ghee. Serve them warm or cold.

FRIED JACKFRUIT IN GRAVY

Ingredients:

500 grms young jackfruit cut into 1 inch pieces
Little tumeric powder
Salt
Mix every thing and deep fry, keep aside.

Seasonings:
1 tsp cumin seeds
3 cloves
1 inch cinnamon stick
2 bay leaves
1 sprig curry leaves
1 dry red chillie cut into pieces
2 tbs oil

Main gravy:
150 grms onion paste
1 tbs garlic paste
1 tbs ginger paste
4 green chillies made into paste
2 tomatoes made into puree

White paste:
6 cashew nuts
½ tsp sesame seeds
½ tsp cumin seeds
½ tsp aniseeds
½ tsp poppy seeds
Grind every thing into a paste.

Powders:
½ tsp tumeric powder
1 tsp chillie powder
1 tsp coriander powder
½ tsp garam masala powder
Salt to taste



Method;
Heat oil in a wok, add all the seasonings.
Let them splutter.
Add in the onion , garlic, ginger, and green chillie pastes one by
one and sauté well until they change colour.

Now add in the white paste and mix well, after a few seconds
add in the tomato puree and stir well.
Now mix all the powders, salt and stir well till oil separates.
Add in 1 cup of water , mix well, add in the fried jackfruits.
Let it boil once, remove and serve.
Garnish with coriander leaves.
You can squeeze little lime juice if you like.

i will post my version of murungakeerai sambar tomorrow.
Also ur kongu masala powder is doing wonderful magic in our house.

i prepare vegetable with that, it is goes well for chapathi. we like that taste very much.

normal poriyal i make with green chilly, instead i am using this powder, wow my kids will say.

sambar is too tasty with that. my one lot of powder is finished , i have to prepare second lot tomorrow.

I have posted a recipe in Kugan 1 on page 39 as
tapioca slices. In our local language we call it bingka.

We can do it with rice flour also. I will post the recipe soon.
Both can be done without adding any eggs.

It will be very tasty when you bake it.
So I normally bake both the varities.

BINGKA BERAS

Ingredients:

450 grms fine rice flour
150 grms corn flour
½ tsp salt
2000 ml coconut milk
300 grms sugar (more if you like)
150 ml water
2 pandan leaves
1 tbs thick coconut milk.

Method:
In a pot, combine the sugar , pandan leaves and water.
Bring to a boil to dissolve the sugar, cool the syrup.
Discard the pandan leaves.

In a bowl add in the rice flour, corn flour salt and coconut milk.
Add in the cooled syrup and mix the batter well.
In a wok, cook the mixture on low heat stirring continuously
with a wooden spoon until the batter becomes fairly thick,
but still runny.

Pour the hot sticky batter into a greased 7 inch cake tin.
Smoothen and level the surface with a plastic spatula.
Glaze the top with 1 tbs of thick coconut milk.
Bake in the preheated oven at 200 degrees C for about 30 minutes
Until the topping is golden brown.
You have to cool it well before cutting into squares.

BROAD BEANS PAAL CURRY

Ingredients:

100 grms avarakai cut into 1 inch in length.
Boil it with little water keep aside.
1 small potato boiled and cut into tiny pieces (optional)
1 onion chopped fine
1 small tomato chopped fine
2 green chillies sliced
¼ tsp mustard seeds
1 sprig curry leaves
1 tbs coriander leaves chopped
1 tsp oil
Salt to taste
2 ½ cups of coconut milk. (more or less )

Paste:
1 tsp poppy seeds powder
1 ½ tsp coriander powder
1 tbs green chillie paste
½ tsp ginger paste

Method:

Heat oil in a wok, add in the mustard seeds, when the splutter,
add in the curry leaves, onions and green chillies.
Sauté well, add in the chopped tomato.
Let it cook until mushy. Add in the pastes, stir nicely.
Add in the boiled avarakai and potato.
Add little water and cook till the raw smell goes.

Reduce the flame low, add in the coconut milk and salt.
Keep stirring as you are adding the milk.
Let it come to a slow boil as you are stirring.
Remove from stove, garnish with the coriander leaves.

Note: for a different taste and smell, you can temper
with cinnamon, cardamom , aniseeds and cloves
along with the other ingredients.

here is the my mom's version of murunga elai sambar

Drumstick leaves sambar:
-----------------------

toor dhal - 1 cup (boil and keep aside)

Now grind the following:

red chilly - 5
jeera - 1/2 tsp
garlic - 5 pips
coconut - 4 tblsp grated
dhania seeds - 2 tsp

grind the above ingredients like a chutney and keep separately.

now in a pressure pan, add oil, kadukku, urad dhal, 1/4 tsp of jeera, 1 red chilly . when kadukku pops up add curry leaves, then add small onion - chopped, 200 gm (roughly chopped), fry till it turns into pink colour.
then add the ground masala and fry nicely till nice smell comes out of it.

now add 4 tomatoes medium size, chopped and fry till it comes like a gravy , then add 2 cups of drumstick leaves, fry for 2 minutes, then add the boiled dhal. add required amount of salt,turmeric powder, water and close the lid and allow it for one whistle.

on top add 1 tsp of ghee and little coriander leaves. this is very tasty. u can have it with steamed rice.

Selviem. this is called the seven cup cake.
The sugar is 3 cups in the original recipe.
I find that 2 cups of sugar is more than enough.
You can add 3 cups if you want.

SEVEN CUP CAKE

Ingredients:
1 cup besan flour
1 cup grated coconut ( only the white part)
1 cup milk
1 cup ghee (little more if you like)
2 cups sugar


Method:
In a wok add a tbs of ghee.
Dry roast the besan till the raw small goes, cool.

In a heavy bottomed pan , add in the sugar, milk,
coconut and the besan, on a low flame cook stirring,
occasionally for about 20 minutes or until the mixture
starts to froth and will start to come off from the sides of the pan.

Slowly pour the rest of the ghee into the pan, while stirring
continuously.
Within few minutes the entire mixture will harden a bit,
and become thick.
Take off the stove and pour it onto a greased plate.
While it is still hot, draw the lines with a sharp knife to make
small squares.

mothai = inbetween kootu & poriyal

Avaraikai Mothai: de stringed & cut into pieces say about handful. (Boil this with enough water & keep it aside) dont add too much water to it)
1 onion chopped
1 large tomato chopped
karuvepila, kothamalli nalla half handful each chopped ( i like to add lots so add accordingly)
turmeric 1/2 tsp
sambar podi 1 to 1 & half tsp (kaaram ungaluku thaguntharpol)
1 green chilli chopped.

In a pan add 1 Tblspn oil & 1/2 Tblspn ghee or half of both.
add mustard seeds, jeeragam, when mustard splutters add onions, green chillies...let the onions become limp then add the tomatores let the water evaporate add the sambar & turmeric podi's....fry this well (stirring continuously) till oil comes out( more or less) . Now add the boiled avaraikai & add the kothamalli & karuvepilai....mix well....add salt.
This will be like a mothai becoz of the onion/tomato & sambar podi.

for variations:
u can add garlic ginger paste/ can add plain coconut shreds...all will taste well. I like the plain one...nalla vaasanaiya irukum !

Mix this with hot rice & ghee or enjoy with chapathi...;-)

Aarthii, very glad tht kutti paiyan liked arisiyum paruppu saadham... u can try some variations like adding sombu, pattai,krambu etc... also u can substitute green moong/yellow moong dhal in place of tuvar dhal... ellam nalla irukkum...

Ivalo different types pannalama,arisum paruppum sadathai,sure dev,kandipa pannidaren.

i am preparing menu in the diary. so that everyday i can cook without any confusion. sometimes we eat out, so accordingly i will adjust the menu. before they come i will make some sweets and snacks. yesterday i tried 7 cup sweet, it came out very nicely. in my house kids and husband asked what is the name. coz it looks like mysore pak , inbetween coconut is coming, they are totally confused. then immediately then themself declared some new type of sweet from the internet.

friends, this is my mom's receipe and its my favourite too. try this out.

Keerai Kulambu:
---------------

Arai keerai - 1 bunch , clean boil it with 2 greenchilly and grind it to a paste.

if arai keerai is not available, we can do it with palak.

grind the following to a fine paste:
------------------------------------
fry all the ingredients in a tsp of oil

red chilly - 3
dry dhania - 1 1/2 tsp
jeera - 1/4 tsp
kadalai paruppu - 1/2 tsp
shallots - 5
coconut - 2 tblsp grated

now add the ground paste in the keerai mixture.

in a pan add 2 tsp of oil, kadukku, vadagam, curry leaves, one red chilly. let the kadukku pops up, then add the keerai and ground paste, required salt, 1/2 tumeric powder and allow it to boil, then add tamarind extract - 3 tblsp (thick) , let it boil nicely till the raw smell goes out of it.

serve with steamed rice and ghee.

this is different dish, which is very easy to make.

this dish can be made with surakai or drumstick or green long brinjal. i am posting for surakai.

surakai porima:
---------------

boiled cooking rice - 3 tblsp dry fry in a heavy bottomed pan, fry this in a slow fire, so that the rice should fry nicely otherwise the taste is not good. fry like a poriarisi.

dry red chilly - 2
dry dhania - 1 1/2 tblsp
jeera - 1/2 tsp

all fry in a dry till nice smell comes out of it. now grind this with the fried rice like a coarse powder and keep aside.

surakai - 1/2 kg peeled and cut into cubes
small onion - 15
green chilly - 2
turmeric powder - 1/2 tsp
salt required

cook the vegetable with the above ingredients. when the vegetable is done, grind coconut - 4 tblsp coarsely and add this to the vegetable mixture. allow it to cook for 5 minutes, then add the ground powder little by little to the curry and stir otherwise lumps will form. It is not necessary to add all the powder, may be 3/4th of the ground is enough, we have to check the consistency of the curry and u can stop adding that powder. let it boil for another 5 minutes.

in the meanwhile, in a separate pan, add oil, kadukku, urad dhal, curry leaves and transfer this in the curry.

this is very good for steamed rice.

Drumstick leaves Curry :: Murungai keerai kulambu

Heat a tsp oil. Add a heaped tbsp of toor dhal & 4-5 red chillies. Once the dhal starts becoming golden add 1 tbsp cori. seeds 1 tsp jeera & 1/4 tsp peppercorns. Fry till flavourful. Switch off flame & add a big pinch of asafoetida & 1/3rd coconut grated,1/4 tsp turmeric pwd, req salt. Mix well & once cool, hgrind it to a smooth paste.

Roughly crush 15-20 pearl onions & 2 garlic pods & add to the ground mixture.

Heat 1/2 tsp oil. Splutter mustard & 2 dry chillies.

Add the ground mixture , a big bowl of cleaned drumstick leaves & 1/2 ltr water(qty here is approximate. Use your judgement). Let it come to a boil. Check for taste & add more salt,chilly pwd if req.

Let boil for 3 mins until the raw flavour of masalas are gone & the curry becomes flavourful. Don't let it boil for too long. just around 3-4 mins would do. Done. This curry should be watery. Just a tad thicker than paruppu rasam is what we r looking for.

Serve with rice.:slurp:

with black bean filling, do you remember that. Kugan' part 2 pg19
The same way you prepare the dough for the pau.
sambal means normally it is non-vegetarian.
chicken, or anchovies is added to the chillie paste
onions and so on. Its made as a filling for the pau dough.
Normally it is steamed.

I have made vegetarian sambal for the coconut milk
rice which I had posted earlier. kugan's part 2 pg 11

TOMATO PACHADI

Boil 2 big tomatos in water. While boiling just poke them with a knife so that the tomato gets cooked inside.

When you see cracks on the tomato skin, take them out and peel the skin and mash this in a bowl. Add required salt.

Thalichufy with kadugu, perungayam, green chillies (konjam kaarama irukkattum) and curry leaves. Mix well, and add curds and mix again.

Raw tomato pidikadhavangalukkaaga......

Simple bagjii for the visitors.

BAJII

For Batter:
2 cups chana flour
2 tbs rice flour
1/4 tsp asafetida powder
2 tsp chillie powder
salt to taste

Veges for bajji
1 potato
1 big onion
1 eggplant
1 green plantain
oil
Cut all the vege into thin rounds.

Combine all the ingredients for the batter in a big bowl. Add water slowly, while beating with a whisk.
The mixture should have the consistency of pancake batter.
Heat oil in a wok. Dip the vege slices in the batter.
slide them into the oil and deep fry them till golden.
Remove from the oil and drain. Serve hot with coconut chutney.

Note: you can also use cauliflower florets.

I learned to do this dish when I visited my sis-in-law
in US.


Burrito Malaysian Style

Ingredients:
Make some chapattis
Some cooked rice
1 small cucumber cut into small pieces
Little sour cream

For Salsa:
2 ripe tomatoes chopped
1 onion chopped
1 capsicum chopped
small carrot chopped
2 tbs lime juice
Few sprigs of coriander leaves chopped
Salt and pepper to taste.
Mix everything and keep for about 30 minutes.

For gravy:
1 can black beans or red beans
1 onion chopped
1 tsp ginger and garlic paste
2 tsp chillie powder
1 tsp coriander powder
tsp cumin seeds
Salt to taste
1 tbs of oil
Little water

Method:
Wash the black beans to take out excess salt.
Heat oil in a wok, add the cumin seeds.
Now add the onions and saut well.
Add in the ginger garlic paste.
Now add the chillie and coriander powder.Mix well.
Add the black beans and salt.Add little water.
Cook on low heat till the beans are cooked.

To make the Burrito:
Put 2 tbs of bean gravy on the middle of the chapatti.
Then add 2 tbs of cooked rice on the gravy.
Add 1 tbs of the cut cucumber
Then add 1 tbs of the salsa.
Top it up with a dollop of sour cream.
Fold the chapatti. ( see the picture how it is folded)
Enjoy


Note Non vegetarians can add boiled shredded chicken
in the gravy.

nice to see u in the thread. vadagam means karuvadagam, which my mom makes at home during summer season and store it for year.
whenever u give tadka for all curries she use this little, which gives nice smell and taste. if u don't have karuvadagam, u can use small onions finely chopped a little, with methi
seeds, jeera, kadukku, urad dhal, u should fry till the onions turns nice golden brown colour.

in india u will get readymade. we can make thogayal with this.

FRIED PAPPADAM IN SPICY SAUCE ( KERALA DISH )

Ingredients:
1 cup grated coconut
2 tbs urad dal
4 dried chillies
3 sprigs curry leaves
1 tsp tamarind concentrate
2 sprig curry leaves fried in oil
salt to taste
1/4 tsp tumeric powder
2 round pappadams cut into 1 inch and fried. (or appala poo)
1 tbs of coconut oil

Method:
Heat 1 tsp oil in a pan, fry the urad dal in medium heat.
Then add the coconut, and red chillies and pan fry until
The coconut turns golden brown. Add the 3 sprigs of
Curry leaves. Stir well and remove.
When cold grind the ingredients with just enough water
To make a thick smooth paste.
Dissolve the tamarind in 2 cups of warm water.
Combine the tamarind water with salt and tumeric
powder and cook over medium heat.
When it starts to boil, add the ground coconut and blend well.
Bring to boil again, reduce the heat and simmer for 10 minutes.
Remove from stove, add the fried curry leaves, and 1 tbs of oil.
Now add the pappadam pieces on top. Stir gently. Serve

K, capsicum, button mushrooms,karpooravalli ilai, spinach leaves ,baby corn , nenthiram palam idhilellam kuda bajji seiyalaam... My personal fav is onion,bread & capsicum...adhilum bread sandwich bajjina innum nalla irukkum... just spread chutneys(like mint chutney /tomato sauce etc) of ur choice & make small sandwiches..dip it in the batter carefully & deepfry...:slurp: some ppl use chow chow,pudalangai aswell for bajji... but it was not to my taste... pudalangai is best suited to make pudalangai 65 aka chilly pudalangai... :yes:

eh excuse me ladies. I wanted to try something posted in this thread (involving peerkangai aka ridge gourd) . I tried to locate the recipe for few mins and then since I couldn't find it, I didn't pursue to try out the dish.

Please consider my request (at your own convinience and leisure) to make an index involving (and segregating) tiffin/rice/sweets/gravy varities.

and also an index for vegetables / fruits involved. (segregating)

Its very time consuming and may take some months or a year. But this request can be kept stored somewhere in the least priority list and can be updated slowly as and when time permits.

Its esp useful for ppl who wanna try out new recipes when mood swift calls for :oops:

Shakthi maam unggallukku erandu ridgegourd recipes.



RIDGE GOURD DELIGHT


500 grms ridge gourds ( peeled and cut inti 1" cubes.)
1 tbs coriander seeds )
1 tbs sesame seeds ) fry all these in a tsp of oil
1 tsp cumin seeds )
6 dried red chillies )
1 tbs ginger paste }
1 tbs garlic paste } grind together with the above ingredients
1 small onion paste }
2 tbs tamarind paste }

1 big onion cut into chunks
4 pips garlic sliced into halves
1 green chillie cut into rounds
tsp mustard seeds
oil
salt to taste
Method:
Put a wok on fire and pour the oil.
Add the mustard seeds, then the onions,garlic, and green chillie.
Fry a minute then add in the paste, salt and cook till oil rises.
Add in the ridge gourd and let it cook. (Ridge gourd cooks very fast.)
Remove from fire and serve with steaming rice.

RIDGE GOURD IN MASALA

Ingredients:

1 ridge gourd peel the rough edges, slit and cut into pieces.
3 tomatoes chopped
2 onions chopped
1 green chillie sliced
1 tsp chillie powder
tsp tumeric powder
1 tsp coriander powder
1 tsp ginger and garlic crushed roughly
tsp mustard seeds
tsp cumin seeds
tsp urad dal
1 sprig curry leaves
3 tsp oil
Little coriander leaves for garnishing
Salt to taste

Method:
Heat oil in a wok, add the mustard seeds, cumin seeds urad dal
And curry leaves. After a second, add in the chopped onions,
and green chillies. Saute for few minutes then add the
Ginger garlic and fry till the raw smell goes. Now add the chopped
Tomatoes and cook till the tomatoes are mashed.
Now add the cut ridge gourd along with tumeric powder,
Chillie powder and coriander powder. Stir nicely cover and
Cook for about 3 minutes on low flame.
When done add salt and garnish with coriander leaves.
Remove and serve. Goes well with chappati and rice.

Dev, another orange marmalade for you.


ORANGE MARMALADE

Ingredients:

2 kg sweet oranges
1 cup of sugar for every cup of juice and plup
1 tsp of lemon juice
2 tsp of gelatine
3 cups of water

Method:
Clean the oranges well.
Using a potato peeler thinly peel of the outer skin.
See that there is no white skin, for it will be bitter
Cut the peel into fine strips.

Squeeze out the orange juice with the pulp.
In a small muslin bag put all the seeds ,and the
middle membrances that have been scooped out,
tie thightly and put onto the pan ( For Pectin)

Now in a pan add the sugar, juice with pulp, sliced skins,
muslin bag, lemon juice, water and gelatine.
You can add a drop of orange colour if you like.

Boil for about 20 minutes, then remove the muslin bag.
You can squeeze the bag to bring out the pectin.
Now boil again until setting point is reached.

Now slow the flame, pour a small amount of boiling jam on a cold plate.
Put it in the freezing compartment of the fridge for few minutes.
If the jam gels, its thick enough.
Cool and store it in glass jars.

Kuganka,For hanuman jayanti i made ur vadai as well as paal payasam recipe.Paal Payasam i offered it to god as neivadhiyam.Such a nice dish.Really it is a Heavenly dish.Thanks a lot kuganka.

Kugan, bread bajjila bread won't be oily/soggy... make sure the batter is a bit thick so tht it coats the bread well...

Aprom pudalangai 65 is nothing but substituting pudalangai in place cauliflower in the cauliflower 65 recipe u have posted... I have another recipe but looks like I've misplaced tht recipe book... couldn't find it now... thedi paarthu naalaiku solren...

Aarthii, just cut the bread into small squares(each bread into 4 pieces) or triangles. Dip it in bajji batter & deep fry. dip pannina udane fry pannidanum.

Dev we use the gelatin to make the jam set, since we are not
using the pectin.
The only other thing that I know is powdered jelly,
or china grass which we call agar-agar.
Try without using anything, may be it will set because
of the seeds.

for keerai kulambu, arai keerai is the first, next is palak, third is molai keerai. i dont think methi leaves will be good. may be the bitter taste will be there. u give a try once.

COCONUT RICE
Ingredients:

2 cups rice cooked with salt.
1 cup freshly grated coconut
1 tsp mustard seeds
1 tbs urad dal
1 tbs channa dal
2 dried red chillies cut into pieces
1 green chillie finely cut
1/4 cup halved cashew nuts
2 sprigs curry leaves
2 tbs ghee

Method:
Spread the cooked rice in a large dish
Heat a tbs of ghee in a wok,
Add the grated coconut and panfry on a medium heat,
Till the flakes turn golden brown.
Remove and spread it on the rice.
Heat another tbs of ghee, add the mustard seeds.
Add the two dals and fry. Lower the heat and add
The dried chillies, green chillie, cashew nuts, and curry leaves.
Fry until the cashew nuts are slightly brown.
Remove it from the stove, and pour it over the rice.
Stir gently to coat the rice with the fried coconut flakes,
And spices. Serve warm or cold.

EGGLESS ORANGE CAKE

Ingredients:

2 ½ cups of all purpose flour
2 tsp baking powder
1 tsp baking soda.

1 cup orange juice
1 cup melted butter
1 ¼ cup condensed milk.
2 tsp vanilla essence
½ tsp orange zest.

Method:

Sieve the flour, baking soda and baking powder,
2 times. Put them in a bowl.
Make a well in the centre of the flour.
Pour all the wet ingredients into the flour.
Mix well without any lumps.

Preheat oven to 175 degrees C.
Grease and line a cake tin with parchment paper.
Pour the mixed ingredients into the greased tin.
Now place the cake tin in the middle rack and bake
for about 30 to 40 minutes.
A toothpick inserted into the centre of the cake
should come out clean.
Allow to cool on a rack. Cut into slices, or you can ice
the cake with orange butter icing.

I made coffee butter icing for the cake.
I am not a pro, so the cake is not that beautiful.

TAPIOCA IN MASALA

Ingredients:

2 cups of tapioca cut into cubes.
1/2 tsp black pepper powder
¼ tsp tumeric powder
Salt to taste

To Roast and grind:
½ cup scrapped coconut
2 ts coriander seeds
4 dry red chillies

To Season:
1 tbs oil
½ tsp mustard seeds
2 der red chillies broken
2 tbs thinly sliced shallots
1 sprig curry leaves,

Method;
In a pan put the cut tapioca, tumeric powder, salt,
and the pepper powder.
Add little water and boil the tapioca till ¾ cooked.

In a tsp of oil fry the coriander seeds, red chillie and the coconut,
till the coconut turns golden brown.
Grind everything to a fine paste.

Now add the ground paste to the tapioca and cook further till
The tapioca is fully cooked.
In a pan add the oil , add the mustard seeds, dry chillie, sliced onions.
and the curry leaves. Sauté well and pour it on the cooked tapioca.
Mix well and serve with rice or roti.

EGGLESS COFFEE CAKE

Ingredients:

2 cups self raising flour
2 tsp baking powder
A pinch of salt
1 tbs instant coffee granules
1 ¼ cup fine sugar
1 tsp coffee emulsion
½ cup vegetable oil
½ cup milk (more if needed)
1 tsp vanilla essence



Method:
Sieve the flour with the baking powder twice.
Mix all the dry ingredients together.

Add in the milk, coffee emulsion and oil, blend well with a spatula.
Just make sure there are no lumps.
Add in the vanilla essence. Mix well.
The mixture should be of pouring consistency.
Add more milk if needed.
Line a greased cake tin with parchment paper.

Preheat the oven. Bake at 180 degrees C till the cake is cooked.
Pierce a tooth pick at the centre of the cake.
If it comes out clean the cake is cooked.
It will take about 30 to 40 minutes.

Dear friends I made this coffee cake and iced it with coffee butter icing.
I used 300 grms soft butter, 300 grms sifited icing sugar,
little evaporated milk , 1 tbs dissolved instant coffee and little vanilla essence.
Mixed every thing nicely and did the design using a icing tube.
Sprinkled little white chocklate rice and the muli coloured sweet balls. Thanks Kugan98

[tscii] Suvai nga here is another simple tapioca recipe.
I just like to have for lunch at times.


HOT,HOT TAPIOCA

Ingredients:
500 grms tapioca cut into cubes
1 big onion sliced
2 tsp chillie powder (more if you like)
¼ tsp tumeric powder
½ tsp mustard seeds
½ tsp aniseeds
1 tbs oil
2 sprigs curry leaves
Salt to taste

Method:

Boil the tapioca with little salt until ¾ cooked.
Drain the water and keep aside.

In a wok add the oil, add in the mustard seeds and aniseeds.
Let them splutter, add in the curry leaves and onions.
Sauté well till the onions turn limp.

Now add in the chillie powder and tumeric powder.
One quick stir, (do not let the chillie burn)
Add in 1 cup of water, let it boil. Add little salt.
Now add in the boiled tapioca pieces.
Keep on stirring till all the liquid is evaporated.
Taste for salt and remove.
You can eat it as it is for lunch.
Very filling and tasty.

both the tapico receipe is too good. i prepare the first one. i have to try the second one.
keralite's one of the main food is tapico. they cook little bit soft and mash give tadka with coconut oil with some onions and spice powder,coconut grated. they have it with fish curry.
we can have it with our kara kulambu, it will be very yummy.

My dear friends, here is a sweet treat for all the Kugan Kitchen fans.

MILK JELLY

Ingredients:

25 grms agar-agar strands (china grass)
1000 ml water
400 ml evaporated milk
150 grms sugar (more if you like)
Few drops of pink colour
Little rose essence

Method:
Soak the strands of agar-agar in cold water for an hour.
Drain the agar-agar, put them in a pot.
Add 1000ml of water and stir constantly, while bringing
to the boil.

Add the sugar and keep stirring and simmering until all the strands
are completely dissolved.
Add in the colour , milk and essence.let it boil once.
Remove and pour into a tray that has been rinsed in cold water.
Allow to set, cut into diamond shapes.
This will be a firm jelly.
