CHINESE GARLIC RICE (Kugan )

GARLIC RICE CHINESE STYLE
Ingredients:
2 tsps oil
6 garlics cut into big pieces
300 grms cold cooked rice with some salt
2 tbs spring onions chopped
½ tsp soy sauce
A dash of pepper powder
A dash of aji-no-motto (OPTIONAL )
Little salt if needed
Method:
Heat a non- stick wok on high heat, add in the oil.
Add in the garlic and stir fry till fragrant.
Cook for a minute, tossing and turning quickly to avoid burning.
Add in the rice and stir vigorously, but gently.
See that the rice is mixed well with the garlic and oil.
Do this for a minute, toss in the spring onions.
Season also with the soy sauce, pepper and aji if using.
Mix well and remove from the heat. Serve warm with other dishes

STEAMED TAPIOCA TEA CAKES ( Kugan )
Now this the fasting month. You can find our local kuihs every where.
For a very small piece you have to pay 40 sen.
I found this recipe in our local newspaper, made it for tea. Kugan
STEAMED TAPIOCA TEA CAKES
Ingredients:
(A)
330 grms of grated tapioca
70 grams of grated sweet potato
10 grms of custard powder
170 grms of castor sugar
100 grms sago soaked in 20 ml coconut milk for 10 minutes
130 ml thick coconut milk.
(B)
Topping:
125 grms grated coconut
¼ tsp of salt.
Method:
Use little butter and grease a 15cm square baking tin.
Mix together all the ingredients in (A)
Pour the mixture into the greased tin.
Steam the contents covered for about 40 minutes or till cooked.
Remove and allow the cake to cool fully.
Steam the ingredients in (B) for 10 minutes.
Remove and spread it on a tray.
Cut the steamed cake into neat squares.
Roll it in the steamed coconut and serve with a cup of steaming hot tea.

CORH FLAKES COOKIES (Kugan )
Dear friends, the cookies I made for Rubenee's birthday.
Kugan.
CORN FLAKE COOKIES
Ingredients:
250 grms caster sugar
320 grms soft butter
1 tsp vanilla essence
500 grms all purpose flour
80 grms corn flour
100 grms corn flakes, ground into powder
1 tsp baking powder
Little corn flakes for decorating
Method:
Preheat the oven to 160 degrees C for 10 minutes.
Grease baking trays, keep aside.
Cream the caster sugar and the butter.
Add in the vanilla essence.
Now add in all the dry ingredients in the butter mixture.
Knead to a nice dough. Roll the dough and cut into desired shapes
Gecorate with a corn flake piece.
Place the pieces a little apart and bake for about 15 to 20 minutes.
Remove and cool well before storing.
