A simple recipe for Madhu anneh, since he bought agar agar from Malaysia.:-D
DOUBLE LAYER AGAR AGAR
Ingredients:
FIRST LAYER:
7 grms agar agar powder
80 grms sugar
¾ cup milo
1 ¾ cups of water
SECOND LAYER:
11 grms agar agar
80 grms sugar
1 ½ cups of water
1 can evaporated milk
Method:
In a pot, add in all the ingredients of the first layer.
Now cook on low flame and bring to a boil.
Keep stirring till the sugar and agar agar powder are dissolved.
Rinse a mould or container, pour the mixture, and allow to set.
Once set, take a fork and lightly scratch the surface of the set agar agar.
Now for the second layer, mix the sugar and agar agar powder in a pot.
Add in the water and bring to a slow boil stirring till sugar and agar agar are dissolved.
Now stir in the evaporated milk, do not let it boil, remove.
Gently pour over the milo layer, chill till set.
Cut into shapes and serve.

We do not celebrate Onam, but I always cook the Kerala dishes on the Onam day for my family.
This year very few items only. Kugan.
pumpkin erissery, avarakkai thoran, cucumber tayir patchadi, inji puli,
appalam, vadai, rice, avial, paruppu, ghee, banana and moong dal payasam.

Kannan anna, first we make the chakka varatti.
CHAKKA VARATTI
Ingredients:
4 cups of chopped ripe jackfruit flesh
¼ cup water
2 cups of jiggery
Little water
1 cup ghee
¼ tsp cardamom powder
Method:
Pressure cook the jackfruit flesh with the water till it becomes soft.
Let it cool and grind it to a smooth paste in a blender.
Dissolve the jiggery in little water, heat up till all the jiggery is dissolved.
Filter and remove the impurities from the syrup.
Now add the syrup and the blended jackfruit flesh in a pot.
Cook on medium heat till the water content is reduced.
Keep on stirring, to avoid getting burnt.
Add the ghee little by little and the cardamom powder.
Continue to stir till you get a dark brown colour and thick jam.
Remove and allow to cool.

Then we make the Chakka Pradhaman.
CHAKKA PRADHAMAN
Ingredients:
1 cup chakka varatti
1 ½ cups thin coconut milk
½ cup jiggery, made into syrup (or as to taste )
Little cardamom powder
½ cup thick coconut milk
1 tbs ghee
5 cashew nuts broken into halves
10 raisins
2 tbs coconut sliced into small pieces
All roasted in the ghee.
Method:
In a thick bottomed pot, add in the chakka varatti, along with the thin coconut milk.
Keep stirring so that the chakka mixes with the coconut milk, and becomes liquid.
Add the jiggery syrup to this mixture and simmer until it turns thick.
Keep stirring continuously to make sure that the bottom is not burnt.
Now add in the cardamom powder, and the thick coconut milk.
Stir nicely, do not allow to boil. Remove from the stove.
Heat a pan with the ghee, add in the cashews, raisins, and the coconut pieces.
Roast till golden and add to the chakka pradhaman.
Serve and enjoy.

நேற்று ஒரு ரெஸ்டாரெண்ட்ல ஓனம் சாத்யா சாப்பிட்டேன்..ஓகே..வெல்லத்தில ஒரு பாயசம்..(அடைப் பிரதமன்?),ஜவ்வரிசி ப்பாயசம், வடை, பாகற்காய்வத்தல், நே.சிப்ஸ்(உப்பு+வெல்லம்), முட்டைக்கோஸ் காரட் பொரியல், மோர்க்குழம்பு, சாம்பார், ரசம்,மோர், புழுங்கலரிசிச் சாதம்( நல்லவேளை வெள்ளை தான் - சிகப்பு இல்லை), இரட்டை அப்பளம்,உ.கி கறி என இருந்தன.. சில ஐட்டம் விட்டுப்போயிருக்கலாம்.. மெய்னாய் ஒரு இஞ்சிப்புளி என்று ஒன்று உண்டில்லையா..அது இல்லை..
போன சனிக்கிழமை மாங்காய் இஞ்சி, பச்சை மிளகு கிடைத்தது..அதில் வீட்டில் ஊறுகாய் செய்தார்கள்.. நன்னாயிட்டு இருந்தது..

Here Rose, a simple Chinese stir fry recipe, with easy to get ingredients.
TOFU WITH BRINJAL
Ingredients:
1 tbs oil
1 long purple Chinese brinjal
Cut the brinjal in half and diagonally slice it in ½ thick pieces
1 tbs oil
3 pieces of firm tofu
½ tbs of cornflour
Little dark soy sauce
Little light soy sauce
Cut the tofu into fingers, marinate with all the ingredients, except the oil.
2 tsp oil
5 pips of garlic chopped
5 dry red chillies, cut into ½ inches in length
2 big onions , thickly sliced in half moon shapes.
2 tsp vinegar
1 tbs light soy sauce
1 tbs mushroom sauce
2 tsp chillie sauce
¼ tsp sugar
Salt to taste
½ cup of water
Mix all the ingredients in a bowl.
1 tbs roasted sesame seeds
Method:
Heat 1 tbs of oil, and saute the brinjals on medium heat. Once they are soft, little brown
on both sides, remove to a plate.
Heat the another tbs of oil, saute the tofu pieces, till they are little crisp on both sides. Remove and keep aside.
Heat the 2 tsp oil, add in the chopped garlic, saute till lightly brown.
Add in the cut red chillies, stir fry a little. Add in the thickly cut onions.
Fry till the raw smell goes and the onions a little limp.
Lower the heat, add in the fried tofu and the brinjals, add in the mixed sauces.
Stir fry gently, taste for the flavor, remove.
Sprinkle with the roasted sesame seeds, serve hot.

Another simple dish.
Simple Murngai Keerai Curry
Drumstick Leaves - 250 gms
One Big Onion
2 garlic finely chopped
3 red or green chilles
For Seasoning - Little mustard seeds, jeera, urad dal.
in a pan without any oil put the washed leaves and cook them thoroughly add very little water if needed. Once it is done remove it in a plate. In the same pan put oil season the mustard jeera and urad dal. add the chilies and garlic fry till they sizzle then add the onion and required salt. when the onions slightly browns add the precooked leaves to the pan fry for 5 more mins and serve with white rice.

I made your Noodles with red sauce for dinner. Turned out so yummy. K when ever I make your malaysian or chinese or thai dishes I get so much appreciation. I really thank you from bottom of my heart. Thanks for those wonderful recipes. I also need some more stir fry noodles recipes. I already have 3 more stri fry noodle recipes to try from yours so avasram illa. Take your time. Do you know something using rice noodles (medium width or Large width)

Today I made breakfast and lunch...
I made Idly and onion+tomato chutney.
Lunchkku paruppu, arai keerai poricha kuzhambu, pepper rasam, potato fry, curd.
For dinner am gonna prepare Brinjal tofu as side dish. I'll let you know the result soon(Kandippaa nalla thaan irukkum) :D.

Oh! palaya kulambu thaanaa?
My great grandmother, used to have an earthen pot. She will pour the remainder kulambu into the chatty.
She will do that every day for a week, but will heat up the contents daily.
After a week, the whole mixed kulambu will be heated until it becomes thick, and oil separates from the kulambu.
The sunda kulambu will be served on steaming rice. The taste will be abaaram.
Nobody does that nowadays. They say bad for health.
