    DATE CAKE

    Ingredients:

    20 seedless dates
    ¾ cup milk

    ¾ cup sugar

    ½ cup vegetable oil

    1 cup all purpose flour
    ½ tbs baking powder
    Sieve both together twice, and keep aside.

    Method:

    Preheat the oven at 170 degrees C for 10 minutes.
    Grease and line a baking pan with parchment paper.

    Put the dates in a pan with the milk, heat for about 5 minutes.
    Remove and cool, the dates will become soft.

    Now put the sugar in a blender, add in the milk and dates.
    Now blend till smooth.

    In a bowl pour the vegetable oil. Add in the ground paste.
    Use a fork and mix well, till well blended.
    Now add the flour little by little to the mixture, and mix gently.
    Pour into the prepared pan.

    Bake in the oven for about 20 minutes, or till the cake is baked.
    Test it with a cake tester. Remove and cool before slicing.

    Dear friends, went to friend's house for valla kaapu. There they served 5 types of mixed rice.
    For white rice they served a type of brinjal kulambu with lots of garlic. I thought just brinjal kulambu.
    But the taste was abaaram, viduvenah, sweet talked and got the recipe from the caterer.
    The secret lies in the masala. Here is the recipe. Kugan


    ARACHIVITTA BRINJAL KULAMBU

    Ingredients:

    Oil 3 tbs
    ½ tsp mustard seeds
    ¼ tsp asafetida powder
    ½ tsp funugreek seeds
    1 sprig curry leaves
    2 green chillies, slit into 4 and cut across

    1 big onion chopped
    15 garlic pips
    1 big tomato chopped
    ¼ tsp turmeric powder
    300 grms brinjals cut into big cubes

    Roast and grind to smooth paste:
    2 tsp oil
    2 tbs coriander seeds
    1 tbs channa dal
    1 tsp aniseeds
    ½ tsp black pepper corns
    10 dry chillies broken
    ½ cup grated coconut
    1 tsp kas kas
    Roast all the ingredients separately and grind to a smooth paste using little water

    1 lemon size ball of tamarind, extract 2 cups of juice
    Salt to taste
    1 tsp jiggery

    Method:
    Heat oil in a pot, add in the mustard seeds to splutter.
    Add in the asafetida powder, funugreek seeds , curry leaves and the green chillies.
    Now add in the onions, and garlic and saute till the onions turn little limp.
    Now add in the tomato, turmeric and cook till the tomatoes turn mushy.
    Add in the cubed brinjal pieces, stir fry nicely, cover and cook for 5 minutes.

    Now add in the ground masala, and stir fry again for about 3 minutes.
    Add in the tamarind water, and enough water to make a thick kulambu consistency.
    Add in the salt and sugar, cook on medium flame till oil starts separating.
    Remove and serve on steaming rice with a dollop of ghee.

    Pineapple cardamom lassi for a hot afternoon!

    Blend together 2 cups chopped pineapple, 1 1/2 cups yogurt, 1/2 cup milk, a pinch of cardamom and sugar to taste.

    நன்றி குகன் ஜி.. சாஸ் ம் கேக்கும் அனேகமா வீக் எண்ட் தான் செய்யச் சொல்லணும்.. நன்றி அகெய்ன்..இது வரை பேக்செய்ததில்லை..ம்ம்.. டேட்ஸ் ஹல்வா எப்படி இருக்கும்..அப்புறம் குஜராத்தியில் டேட்ஸ் கட்டியாய் சதுரம் சதுரமாய்ப்போட்டு மேலே அழகான இளம்பெண் முறுவலிப்பது போல மு.ப பாதாம் பிஸ்தா தூவியிருப்பார்கள்..அதுவும் halwa போலத் தான் கிளறவைத்து ஆற வைக்க வேண்டுமா..

    Madhu anneh bayanthuteenggala? It is very simple to do.
    Summa ungga kita oru scene potten.

    Madhu anneh I too do not have the mould, I will show you how to make the pattern.

    KUIH ANGKOO


    Ingredients:

    Outer Layer:
    200 grms glutinous flour
    150 grms orange sweet potato skinned and cubed
    1 tbs sugar
    8 tbs oil
    80 ml hot water

    FILLING:
    160 grms skinned mung beans (pasi paruppu ) soaked for 3 hours.
    90 grms castor sugar
    A pinch of salt
    5 tbs oil

    Some banana leaves cut into rounds

    Method:
    Steam the cut sweet potatoes until soft. Mash while still hot, add in the glutinous flour.
    Add in the sugar and salt and mix until it turns crumbly.
    Add in the oil and the hot water, gradually knead into a soft dough.
    Cover the dough with a clean kitchen towel and leave aside.


    Steam the soaked mung beans for 20 minutes, or till they are soft.
    Remove the steamed beans and place in a food processor. Add in the sugar, salt and oil.
    Process into fine paste then remove and shape into small round balls.

    Shape small balls from the skin dough into rounds. Flatten each piece and place a small ball of the mung filling in the centre. Wrap up to conceal the filling and seal.
    Dust lightly with extra glutinous flour, press the balls into the plastic mould.
    Knock out the angkoo and place on the round banana leaf.
    Steam over medium heat for about 10 minutes. Brush the steamed angkoo lightly with oil.


    NOTE: I did not have a mould. So I just flatten the round kuih on the banana leaf.
    Used a fork and made patterns all around.

    Enjoy Madhu anneh.

    NOV anneh thanks for the nice recipe.
    I asked my driver to buy me a good pineapple.

    Avar, onnuku rendu, upathirathirkku moonunu.
    He bought for me 3 pineapples.

    I have to think of ways to use up the pineapple.
