    ZUCHINNI VINDALOO (Kugan )

    Zuchinni always brings Suvai into my mind.



    ZUCCHINI VINDALOO

    Ingredients:

    To Grind To A Paste:

    (A)
    2 big onion chopped
    1 big tomato chopped
    2 tbs grated ginger
    2 tbs minced garlic
    2 tsp cumin seeds
    4 dry red chillies broken into pieces
    2 tsp black pepper
    1 tsp mustard seeds
    ½ tsp funugreek seeds
    1 cardamom, only seeds
    1 small stick of cinnamon
    4 tbs vinegar


    3 tbs of oil
    2 tsp of sugar or to taste
    Salt to taste
    2 cups of zuchinni split into 4 and cut into slices.

    Method:
    Grind all the ingredients in (A)
    Heat the oil in a non-stick pan.
    Add in the ground masala, stir fry well.
    Add in the sugar and salt, fry till oil seperates.
    Add in the cut zuchinni, stir fry, the zuchinni will leave water.
    Do not over cook the zucchini, remove and serve with any pulao.

    ehllooo elloo... paarunga neenga neenaicheenga naam vanthomga...

    zuchinni pannumbothu en gnyabagamaa??? ada raaamaaa...enaku zuchinni avolova pidkaathunga k....but becoz of u i have started...making....& its actually not bad a vegie...meley pottu irukarathai kandipa panniduven....one of these days.

    mint chutney sounds like a keeper...panni paarkaren....becoz i do love mint a lot in my cooking.

    k what is ondeh?? is it a gujarathi dish..."undhiyo"? or i could be totally wrong..

    podunga podunga vegie pulao.....vindaloo ku vera enna vegie podalaam??? vinegar irukuma vindaloola? i dont use or like vinegar...ketukaren muthalaiye before my naaku starts oorufying...

    last week i made parupu urundai kuzhambu.....yr recipe....it came out so well that i said i have to thank u.....A1 nga will surely make it often....super taste....l

    Achocho Suvai, I thought you liked zucchini.
    You have given few recipes using zucchini, I believe

    Suvai athoda I am sure you get zucchini a lot in Canada.
    Only here it is very expensive.

    Suvai, you can use lemon juice instead of vinegar.
    Vindaloo naale vinegar thaan. You can use with cauliflower, broccoli, or even carrot.

    Yes, I too love the tomato mint chutney, it goes well with iddli and dosai.
    Suvai, oneh-ondeh is a Malaysian kuih, where we use glutinous flour, or sticky rice flour.
    I think I have posted the recipe before. Anyway I will post the picture for you.

    Suvai I am glad you liked the paruppu urundai kulambu.
    Suvai, I had a relative from India last week, you give her any vege and she will cook it in Indian style.

    You know the water convolvulus, or we call it the kangkong keerai.
    Normally the style is to cook it as a poriyal.
    Or the Malaysians cook it with shrimp paste, a very famous Chinese dish.

    My relative made it into a kutoo
    It tasted nice, I will post the recipe soon.

    amaaam k....zuchinni inga very cheap....i always felt it had no taste what so every lol....except after making yr recipes it changed my views....i guess....it needs a lot more coaxing with spices & karam....to make it stand out as a vegetable....i like very tender ones that we can use raw in salads...

    k...zuchiniya expensive??? ada raamaaa..... wonder why it cant grow in plenty over there....

    oh yes i have given a few recipes becoz....it was either given by my friends or family.... athaan soliteney.....enaku .zuchini ya pidika vacha thu neenga thaango..

    ohhh vindaloo la vinegar thaan main ingri ya? will have to try it with the vegies mentioned & lemon juice.

    ohhh ondeh is malaysian dish ah....

    onga guest kodutha puthu vitha keerai kootu recipe podunga...inga kidaikara keeraiyavachi adjust pannikaren never heard of that kingkong keerai....

    SIMPLE VEGETABLE PULAO (Kugan)

    Suvai here is the pulao recipe for you.
    Sorry the picture is not that clear. Kugan



    SIMPLE VEGETABLE PULAO

    Ingredients:

    2 tsp ghee
    2 tsp oil

    1 inch cinnamon stick
    1 cardamom pod
    1 bay leaf
    2 cloves

    1 onion sliced
    1 tsp ginger paste
    1 tsp garlic paste

    1 red tomato puree it
    2 green chillies slit across
    MIXED VEGES:
    5 beans cut into 1 ½ inches in length
    1 potato cut into sticks
    5 cauliflower florets
    ½ a carrot cut into sticks
    2 tbs of fresh green peas

    A pinch of tumeric powder
    1 tsp chillie powder
    2 tbs mint leaves
    Salt to taste
    1 cup basmati rice soaked for 10 minutes and drained

    2 cups of hot water
    2 tsp lemon juice

    Little coriander leaves chopped

    Method:
    Heat the oil and ghee in a wok, add in the cinnamon, cardamom, bay leaf and cloves.
    Let them crackle, add in the onions and saute till it turns limp.
    Add in the gingerr garlic paste, saute for another minute. Add in the tomato puree.
    Add also the green chillies, the mixed vegetables, tumeric, chillie powder,

    Mint leaves, salt to taste and the drained basmati rice.
    Saute for a minit gently.
    Now in a rice cooker, pour 2 cups of boiling hot water.
    Add in the sauteed vegetables and rice, cover and cook for 10 minutes.

    After it is half cooked, add in the lemon juice, stir the contents gently.
    Close and cook till the light goes off.
    Your hot steaming pulao is ready. Garnish with coriander leaves.
    Serve with zucchini vindaloo

    K, ice cream ready aagitte irukku...S had a taste of it just now and said it tastes like arun icecream... I made vanilla and chocolate... nalla smootha vanthirukku after whipping it 3 times... Innoru thadavai whip pannalaamnu irukken... S was a very smooth n creamy icecream like the ones we get at boomerang...so next time milk bathila fresh cream use panna poren... Thanks a lot for the simple but yummy recipe K...
